If you’re tired of Fat Head dough or are just looking for a pizza crust you can whip up easily, this is the recipe for you.

Ingredients

  • 1/4 cup + 1/2 cup shredded mozzarella, split

  • 1/2 tsp xanthan gum

  • 1 large egg, beaten

  • 1/8 tsp garlic powder

  • 1/8 tsp Italian seasoning

  • 2 TBS low carb marinara or pizza sauce (I use Rao’s)

  • 8 slices of pepperoni

Directions

  • Add 1/4 cup mozzarella and xanthan gum to a food processor and pulse 3 or f times (this keeps the xanthan gum from clumping).
  • Add the egg, garlic powder and Italian seasoning and process until it resembles a batter (there will still be small bits of mozzarella).
  • Sprinkle about 1.5 TBS of the remaining mozzarella on a preheated mini waffle iron then add half of the batter on top. Top the batter with another 1.5 TBS of the remaining mozzarella.
  • Press down the lid of your waffle maker and cook until you no longer see steam (5-6 minutes), then remove to baking sheet for your oven or toaster oven.
  • Repeat steps 3 and 4 for the second pizza crust.
  • Top each crust with 1 TB marinara, remaining mozzarella, and pepperoni. Place under a broiler (oven or toaster oven) until the top looks the way you like it (6 minutes in a toaster oven for me).

  1. This is yummy! The Chaffee crust is super crispy & delicious. Not eggy at all. BTW you can totally make this in a standard two or four-square waffle maker.

  3. Chaffee was a little slimy to me. Will make again cutting xanthan gum to 1/8 tsp or leaving out. Flavor was 5 star.

  5. I made three versions of this recipe. First, I accidentally put all the cheese in with the egg so the crust wasn’t as crispy. Still delicious. The second, I did as per instructions and it was fantastic. Third, I realized we were gonna need more so this one I did quick and dirty, no xanthan gum, all the cheese with the egg and spices and then lined the waffle iron with extra cheese as per instructions. This was also really good. I put each full recipe in my standard Belgian waffle maker which makes about a 6″ round with four sections. Perfect mini pizzas. So tasty!

  6. I don’t have xantham gum but I do have arrowroot powder would that be an acceptable substitute? Also could I do mushrooms or no additives sausage? Thanks.

  7. It tasted really good. I think next time I make it I will leave out the xantham gum . I wasn’t to keen on the mouth feel. My husband loved it. Another great recipe!
