I’ve had a number of requests from people with dairy allergies to come up with a “chaffle” that they can eat. This base recipe provides a jumping off point to create a wide variety of chaffles — sweet or savory. Or you can just use the recipe as-is as bread. In the video you can see an example of a sweet chaffle I made by adding 1/4 tsp of maple stevia as well as a savory chaffle I made with some chipotle, onion and garlic hemp hearts.Ingredients1 large egg1 TB coconut cream *see notes2 TB almond butter1/4 tsp xanthan gum1/4 tsp baking powder1 pinch saltDirectionsWhisk egg in a bowl or Pyrex measuring cup. Add the coconut cream and almond butter and whisk until smooth.Combine the xanthan gum, baking powder and salt in a small bowl. Mix to ensure that the xanthan gum is distributed. Then whisk these dry ingredients into your batter.Divide the batter between two Dash Mini waffle makers and cook for 3 minutes.Remove to a cooling rack for at least 2-3 minutes before serving.Recipe Video Notes Macros are for 1 chaffleTo get coconut cream, open the bottom of a can of coconut milk and drain out the coconut water, leaving just the cream in the can.
