This is, without a doubt, the best asparagus I’ve ever tasted. My family says they’ve never had better. The spears are tender with little bits of crisp from the grill char, and the beefy flavor that gets infused when grilled next to a steak is out of this world. Topped with my cacio e pepe butter, this is some seriously gourmet asparagus.

Ingredients

Directions

  • Snap off the tough bottoms of the asparagus spears. This should happen naturally at the point where the spears start to become tender. See the video for an example.
  • In a pan or baking dish, toss the asparagus with olive oil and garlic, then sprinkle with salt. Let rest while your grill preheats.
  • Preheat one side of your grill to high and the other to medium (with a vegetable basket). The high side will be to cook your protein. If you are not grilling a protein, I recommend “cooking” a left over scrap of steak on this side anyway, as the smoke from it will infused the asparagus with beefy flavor.
  • Grilling the asparagus spears takes about 10 minutes, so add them to the grill when your main course is 10 minutes away from plating. Toss the asparagus every couple of minutes with a pair of tongs. When not tossing the asparagus, keep the grill lid closed so that the smoke will infuse the spears.
  • Once plated, I highly recommend using a course microplane to grate some of my cacio e pepe compound butter on this. Put the butter in the freezer at least an hour before hand to make it easier to grate. I typically finish with a squeeze of fresh lemon.

Grilled asparagus is one of our faves. I’ve found that after I grill steak or chicken I will place the asparagus on the grill and let the juices of the meat finish Their last 2-3 minutes cooking on top of the asparagus. The flavors are wonderful!
