This recipe can be made with or without a whipping siphon. A whipping siphon will yield a fluffier mouse and takes less work, but the manual whipping method tastes just as yummy.

  • Whipping Siphon Method
  • In a mixing bowl or Pyrex measuring cup, whisk together the cream cheese and cranberry sauce until you have an even pink color. Add the heavy whipping cream and whisk until thoroughly combined.
  • Transfer sauce to a 1 pint or 1 L whipping siphon and charge with one NOS cartridge. Shake vigorously for 30 seconds or until you no longer hear liquid sounds.
  • Refrigerate for at least 30 minutes with the nozzle end pointing down. It is best to serve all 4 servings at once, as I find that it doesn’t dispense real well after a night in the fridge.
  • Before dispensing the mousse, hold the whipping siphon upside down and give 4-5 shakes to ensure that the mousse is on the nozzle end.
  • Serve plain or topped with a drizzle of smooth cranberry sauce and/or shaved 90% cocoa dark chocolate.
  • Manual Whipping Method
  • Whip the heaving whipping cream into stiff peaks. Using a blender with a whisk attachment, this will take about 2 minutes.
  • In a mixing bowl or Pyrex measuring cup, whisk together the cream cheese and cranberry sauce until you have an even pink color.
  • Gently fold the cranberry cream cheese mixture into the whipped cream until it is well combined and refrigerate for at least 30 minutes so that the mousse can firm up.
  • Serve either with a spoon or use a piping bag if you want to get fancy with your presentation (see video). Serve plain or topped with a drizzle of smooth cranberry sauce and/or shaved 90% cocoa dark chocolate.

  • Nutritional info is based on a serving size of 1/2 cup and does not include any additional toppings you may add. The way I topped it (with about 2 tsp of cranberry sauce and the chocolate shavings) add less than 1g of net carbs.

    Fantastic! I will look for your physical book under the “pre-order” list on Amazon. So very glad you are doing this. I am buried with print outs that I hate organizing so this will be so much easier….thanks for all your hard work. By the way, made the sugared pecans and the cookies and I gotta tell ya, they were really great!! We seem to be on the same path when it comes to what we like and dislike. Saves me wasting ingredients on recipes for sure. None of this stuff is cheap for a person on a fixed income.
