This chaffle not only makes a great bun for a turkey sandwich (my daughter says, “it tastes like Thanksgiving”), but it also is the foundation for my keto stuffing recipe – just make this recipe with 4 times the ingredients (ideally in a full sized waffle maker like the Dash No Mess).

Ingredients

  • 1/2 cup shredded mozzarella

  • 2 TB almond flour

  • 1 TB coconut flour

  • 1/2 TB Oat fiber

  • 1/2 TB Unflavored whey protein isolate

  • 1/4 tsp xanthan gum

  • 1 large egg

  • 1 TB chicken broth

  • 1 TB stuffing herbs

Directions

  • In a food processor, combine mozzarella, almond flour, coconut flour, oat fiber, whey protein and xanthan gum. Pulse until consistency is like bread crumbs.
  • Add the egg and chicken broth and process until batter is mostly smooth.
  • Add the stuffing herb mixture and pulse until it is incorporated.
  • Put half of the batter in a mini waffle maker and cook until you no longer see steam coming from the waffle maker (approximately 5 minutes).
  • Remove to a wire rack and repeat with the second chaffle.
  • Use as a sandwich bun or in chaffle stuffing.

  • Serving size is one chaffle. Double the macros if making a sandwich.

  1. Is there a substitute for oat fiber or can you leave it out?

      You could try psyllium husk powder, but some people don’t like the flavor — and some brands can give your food a purplish tint. Leaving it out will create thinner batter and a less firm chaffle.

      You could add the same amount of almond flour. I’d also consider adding 1/4 tsp of baking powder, as the whey provides some lift. Hopefully that will result in a similar texture.

  3. Hi Steve! Are the nutritional stats you list above for BOTH chaffles? Or for ONE chaffle?

      The nutritional info is always based on “per serving” and there are two servings (chaffles) in this recipe. It seems I get this question a lot, so if you feel there’s a better way for me to list it so that it’s more clear, I’m open to suggestions.

    Maybe just make a separate box with the nutritional information which states “serving size – one chaffle – nutritional information per serving: ” and the stats. I do like knowing both how many total servings a recipe makes AND what the serving size is! ?. I LOVE. your videos! Very informative, the right info, and entertaining too! Plus your videography is very good! Thank you!

    OK, me again – 🙂 Yesterday I made the Stuffing Chaffles – two to start with. I didn’t get a chance to try them til about 30 minutes ago. I reheated one in the MW with a bit of butter on it. OMG. This is a game changer! Possibly the best-textured low carb/keto bread item I’ve made so far!

    I will probably add more of the seasoning herbs to mine just because I love those flavors so much but otherwise I wouldn’t do a thing differently.

    I plan to have my Thanksgiving turkey sliced and set atop a Stuffing Chaffle with plenty of good gravy on top! THANK YOU very much for this and all your great recipes!

      I just made a turkey sandwich with them and put on the cranberry sauce recipe I posted today. I’m glad you like the consistency as I tweaked that recipe over the course of 8 batches of chaffles until I felt I had it the way I wanted it.

  8. I had to order a bunch of items but figured you use most of these in other recipes, and it all added up to less then 1 meal out with the wife!

    The wife & I tackled this one together. The herb mixture took a while, but it was well worth the effort. Recipe was easy to follow and chaffles came out perfect.

    We made up a couple turkey, cheese and mayo sandwiches. Holy Awesome. Looking forward to Black Friday to make some stuffing chaffle turkey sandwiches. Oh, this time, the keto cranberry sauce will knock them out of the park!

    My family expects me to make my keto Cranberry Jalapeño sauce every year. It’s one of my most-requested things. This year I used 4 pounds of cranberries and canned 6 pints of it – cranberry jalapeño sauce all year! LOL!!

    My husband is so excited to have turkey sandwiches on those stuffing chaffles! ME TOO!

  10. Thanks for another wonderful video and amazing recipe, Steve. I can’t wait to try this stuffing. I think I’d add in some chopped pecans, and a very small amount of those Ocean Spray low-sugar Craisins. Just a few. I like a lot of sage, so more of that. I wonder how this would hold up if you stuck it up ‘the turkey’s butt’ hahaha, as traditional stuffing? I prefer mine baked, like you did. But i’m just wondering about how well it would hold up being inside a turkey and being cooked?

      Great to hear you’re experimenting with the recipe! We haven’t had a whole turkey in a number of years, so I don’t know how well it would stand up to be the “turkey butt treatment”. LOL.

    OMG! I am new to keto and have tried some of your other chaffle recipes, which are awesome. It has been a long week at work and it’s only Wednesday, so getting home I really didn’t feel like cooking a dinner and remembered your stuffing chaffles. I had some pork tenderloin in the fridge, left over. But when I looked at the recipe I realized I didn’t have everything I needed but decided to wing it and see how it would come out. I didn’t have oat fiber, so used a smaller measure of the psyllium husk powder and I didn’t have whey isolate and so used unflavored collagen. I also didn’t have chicken stock or make the stuffing herbs, but used water and some rosemary and thyme. Not what I would usually do, but I was determined I was going to have a sandwich with the pork for supper and amazingly they came out really well! Slathered some avocado oil mayo on each chaffle and added the well seasoned pork and I was a very happy camper! I really have to stock up 🙂

  13. We cooked our turkey yesterday (going to be with our son so no leftovers 🙁 )and I made the stuffing herbs with the turkey fat and the chaffle with the turkey broth. I think I needed more salt but overall the chaffle was a good tasting dinner with my turkey. Not as strong on the flavor of the herbs but the bread was perfect texture. Held together very well. I think I’ll wait till I have all fresh herbs to make the next batch, although I have a dozen stuffing herbs ready to freeze along with 2 dozen broth. Everything measured into tablespoons. I think on the next chaffle I will add poultry seasoning to the dry ingredients to see if that give it more flavor.

  16. Hi. I’m new to low carb/lazy keto. I don’t have whey protein isolate. Any suggestions for a substitute? I have watched lots of your older videos. I know you got tired of chaffles but they are new to me and I am enjoying them 😁

    Thank you for going the distance with this. It looks like a winner. Have you tried making it in anything other than a waffle iron? You think a shallow baking dish would suffice?
