gramsThis is a recipe I originally saw on Milk Street TV. I’ve tweaked it a bit to make it keto and opted for a cleaner oil than the peanut oil they used. The resulting sauce is an absolute umami bomb of a condiment that works great on beef, chicken, seafood and even vegetables. Despite the fish sauce it contains, it DOES NOT taste fishy.
Ingredients
5-6 scallions, both white and green parts finely chopped
1 tsp ground black pepper
1/4 tsp kosher or sea salt
1/4 cup neutral oil (60mL) *see note below
1.5 TB grated ginger
.5 TB allulose or other non-sugar sweetener
1.5 TB fish sauce, soy sauce or coconut aminos
Directions
- Finely chop both the white and green parts of 5-6 scallions and place in a heatproof bowl large Pyrex measuring cup. For me, this was approximately 1 cup, unpacked.
- Add the salt and pepper, and using your fingertips, massage into the scallions until they start to wilt.
- Heat your choice of neutral oil until it begins to shimmer, then pour over the scallions. They will sizzle briefly. Stir together.
- Stir in the ginger, sweetener, and fish sauce / soy sauce.
- Serve over the protein of your choice.

Notes
- Nutritional information is based on a serving size of approximately 2 tablespoons
- For the neutral oil, you could use avocado oil, MCT oil, or peanut oil. If you plan to use this condiment on shrimp or chicken, coconut oil will add a nice bit of extra flavor.

Did this on salmon for dinner. Very delicious. Didn’t have fish sauce so used only soy, very tasty. Thanks for the great ideas.

It was great! Go to sauce now
Excellent! Put on steak and stir fry veggies. This is right up there with Bang Bang sauce. You should try that!
Thanks for the ‘approximately 1 cup’ note for the scallions. Mine are mid-winter pickings from the garden and very variable in size
served over pork chops! delicious!
