gramCowboy butter seems like a bit of an odd name for this otherwise gourmet looking and tasting dipping sauce. It’s remarkably easy to make, comes together in 10-15 minutes, and pairs well with pretty much any protein (though I’m partial to steak).
Ingredients
8 TB cold butter (113g)
1.5 TB lemon juice (mLg)
2 TB Dijon mustard
1 TB prepared horseradish
1/4 tsp smoked paprika
1/4 tsp chile flakes
2 cloves garlic, minced
2 TB finely chopped fresh parsley
1 TB finely chopped fresh chives
2 tsp roughly chopped fresh thyme
Directions
- Combine butter, lemon juice, Dijon mustard, horseradish, paprika and chile flakes in a small saucepan and place over medium heat.
- Whisk frequently as the butter melts to create an emulsion (see note)
- Once the butter has melted, add the garlic and herbs. Whisk together and cook for another 5 minutes, whisking periodically.
- Serve in small dipping bowls along with your protein of choice.

Notes
- This sauce will break (the oil will separate) if cooked too long. I recommend preparing this sauce no more than 10 minutes prior to when you plan to serve it.
