After we made Steve's bacon jam and smoked cream cheese, my cousin combined both on a cracker and exclaimed, "It's like bacon cheesecake!" Then she declared that she was going to make a full sized, savory cheesecake, with an herbed almond flour crust, topped with bacon jam - and she did it! The crust was Carolyn Ketchum's press in pie crust,* with added rosemary and finely grated pecorino romano cheese (because parmesan gives Cousin a migraine). The smoked cream cheese and some goat cheese were combined to make the cheesecake layer - she scraped off the rub, but did sprinkle it on the top under the bacon jam - and then she heated the bacon jam until it was juuuust spreadable and covered the top.
