Connor requested Beef Wellington for his last night at home before shipping off to boot camp. I also decided to open one of my more expensive wines, a Glaetzer Amon-Ra (rated a 97).
I did two family sized and a monster single serving one.
I mixed the duxelles with a cognac duck liver pate.
Served with a reduction of red wine and roasted vegetable demi glace and some mashed cauliflower.
And yeah, that's regular puff pastry. Fortunately it didn't kick me out of ketosis.
