So did you do the coconut flour version or the almond flour version?  I didn't coconut flour.  They're fine and would be a decent ketchup delivery mechanism.  I'll try again with almond flour, and then determine which of the two would be best to mix with tigernut flour -- because I think that will really get that potato taste.

I did coconut flour as well.  Have you every tried mayonnaise with fries?  Very European.  Quite tasty.

So I did a coconut batch and a batch that was 75g almond flour and 25g tiger nut flour.  I figured that when I did a tiger nut chaffle, it tasted like potatoes, maybe I could get these fries to taste more like potato fries.  No dice.  Plus, it adds about 11g of net carbs.

I may try again with almond flour and perhaps add some nutritional yeast.  Another thought is combining this mixture with riced cauliflower to make some faux tater tots.

And yes, I have done fries with mayo (I prefer a blend of mayo and ketchup).

It's "ok".

You get the slimy mouth feel from the xanthan gum a tad, not terrible, but a bit weird. I tried Flavor God's Himalayan salt w/garlic on them and it gave very little flavor, which I'm finding true with the FG that I have tried. I'll have to start drowning it with the seasonings or something. Ketchup was just "wrong" on them. I think it'll be better with mayo, mayo w/ketchup, or bbq sauce, which is how my husband ate his and he said they were delicious. He likes vegetables, though, so I take his review with a grain of salt. 😉

I will definitely be making them again, I'll try the almond flour next time, maybe. I'm also wondering if adding garlic and/or onion powder into the mix would change things up. I might try that.

Maybe I expect too much from keto food? I'll adjust though, I'm still in the early stages of this lifestyle.
