I bought the "variety pack" after Steve did the pizza crust review. It has a variety of products from sweetener, biscuits, brownies, lemon cake and ice cream mix. Today I baked the brownies and they are D-I-V-I-N-E! They even come with a ganache to drizzle on top. They are deep chocolate, fudgy, and just plain yummy. I particularly like the EASY part. Add melted butter, coconut oil and three eggs. Mix, and 20 minutes later you have dessert! Now I think I'll go mix up a batch of Keto Bakes ice cream to serve on top!
I still vote "thumbs up" on the brownies, they don't even need the ganache, but some pecans or walnuts would be a nice add in. However, the ice cream needs some work. It makes up great in my Cuisinart cheapie ice cream maker, tastes yummy. However, after freezing for 48 hours it is a hard, crumbly mess. Zapping in the microwave for 10 seconds improves/softens it somewhat, but the crumbly freezing texture is off putting. Once it melts, the flavor is good (I made coffee flavor) but then it's just melted ice cream.
When I had just made it and was scooping it into a storage container, my husband said, "oh, did you remember to add vodka?" I said, "nah, it won't need it." Sigh, it needs it. I also received a package of vanilla in the "variety pack," so I'll report on how it fares with a little vodka added in. Extra brownies are now in the freezer for future "treat attacks."
