what is anyone's take on this product.
I get conflicting information, anytime I look it up.
I found a pasta recipe, that actually looks like pasta, but now I am torn about trying it {yellow}:sweaty:
My take:
Vital wheat gluten is a protein. For celiacs and people with a gluten sensitivity, it's obviously a "no go". However, I think it is one of the many ingredients that has been demonized by a number of people in the keto community because it contains the word "wheat". For baking, it provides the structure and chew that is hard to achieve without flour. Back pre-keto, I used it in my Neapolitan pizza crust dough to get a little extra chew.
I use it my baking and the only reason I don't use it in more videos is because I get tired of the blowback from the "keto police" whenever I use an ingredient they deem "illegal".

@ketoadmin awesome. I'm pretty strict with my keto, but sometimes you have to go a little dirty. I appreciate your opinion, I have made so many of your recipes. Bought things I would have never even known about or how to use. Your tortillas are a staple in my fridge, I have to make my own paneer, as I live in BFE...but they are awesome.
@cmal65 lol you said BFE.... I haven't heard that or said in a long time, but as soon as I read it I just started laughing and flashbacks. Sorry just had to pop in and tell you that. Made me feel good for some reason.

Its true thou, no Costco, whole foods, nothing. If it wasn't for Amazon and Steve, I'd probably be living on pepperoni and cheese.
