I want to make my own butter.  My question is, is there anything keto about the buttermilk?  Should I discard it,?

I'm not sure what would be un-keto about the buttermilk.  It's pretty tasty just to drink.  You can also it to make creme fraiche.

I've made lots of butter and it's made from heavy cream. Buttermilk is the cast off from the heavy cream after making the butter. It won't make butter, sorry.
