Just to avoid confusion, the purpose of this sub-forum is for when you are looking for a recipe or if you have one that you need some advice on because it's not producing the results you want.
The Test Kitchen is for when Steve (sometimes in conjunction with one of you) is working on a recipe that will require multiple experiments with variations on ingredients and/or cooking methods.

I made the Chaffle recipe from Modernist Panty they had on YouTube. I had to buy 3 of their products, EverCrisp, I'm Free Perfect Gluten Replacement & Sodium Caseinate. It does have a bread taste to it. It made 6 Chaffles. It is hard to spread on the Dash. I can have gluten and dairy. Could any of these ingredients listed above I had to buy, be substituted with other ingredients? It is a good bread replacement for hamburgers etc. I use the Lemon Chaffle Poppy Seed recipe from Steve that has the Ricotta cheese in it as my main waffle recipe. I just leave the lemon and Poppy Seeds out of the recipe for a plain Chaffle.

I was just wondering if anyone else knew what other ingredients would replace Modernist Pantry's, EverCrisp, I'm Free Perfect Gluten Replacement & Sodium Caseinate?
Honestly, I think all of those are unnecessary in a chaffle. I'm still working with the EverCrisp whenever I'm breading something. I still don't have it fully dialed in, but I think that could be a worthwhile ingredient. I've not used the gluten replacement yet. Once I see how that behaves, perhaps I'll have an idea for a substitute.
