Rice alternative that is not cauliflower

I have nothing against cauliflower, but I really don't like it as a rice alternative. Does anyone have any ideas? There are certain kinds of saucy dishes - like many Chinese meals - that just benefit from a bed of something neutral.

One thing that I am going to try is some ground or shredded chicken. I am not going to be fooled into thinking it is rice. But it might still work. 

Have you tried anything that you think works?

Not yet.  I have some ideas.  On thing I want to try is making my own shiritake noodles.  If the texture is right, I would think about cutting them up and then maybe dehydrating them.  Getting the texture and absorbency of rice could be a tricky one.

@ketoadmin True. I haven't tried shiritake noodles because I have heard that they don't have a good texture. But maybe they could be manipulated to make them more rice like.

I was extremely surprised with Konjac rice from Amazon.  Yes, it did need to be rinsed well but it was really good.

@oevans also at some Walmart's they have it in the Asian section, or other places I've seen it is Asian grocery stores, and drug emporium. I don't know if this helps you any. Sometimes its call shirataki. 

Once you learn how to use the noodles and rice properly (because it is some trial and error) it's a great addition to meals and is practically calorie/carb free. But I'll warn you upfront, its a ton of fiber so be ready the next day because it will hit lol.

@ketoadmin it's in the Asian food area...  usually same aisle as Mexican stuff. Also in the tofu area is usually some shirataki spaghetti noodles called Pasta Zero

Well all this talk about the rice got me wanting some. So made this for dinner and figured I'd show a picture for those who have never used it and wandering what it looks like when cooked....
