This recipe always turns out great. 2 total carbs each!! It's from Cooking Keto with Kristie (cookingketowithkristie.com), who is a mom and a Southerner, so you know that she can cook! And, she used to weigh probably double what she does now. She lost it all on Keto. This recipe is actually for chocolate chip muffins because the blueberry muffin recipe was not on her website. They are exactly the same, except the blueberry calls for blueberry extract (1 tsp), and blueberries. I have made this dozens of times (both blueberry and chocolate chip), and they both are extremely good and pretty much fool proof. I add the blueberries/chocolate chips on top after I've put the batter into the muffin cups because they have a tendency to sink to the bottom if they're mixed in the batter. And, I use coconut flour instead of oat fiber (noted in the recipe) because I personally think that oat fiber makes them taste like sawdust. (Really, forego the oat fiber....) I also use silicone muffin cups because they release easily, something that paper muffin cups won't necessarily do.

I love that her site isn't one of those where I have to scroll through 20 screens worth of text to get to the recipe. Out of curiosity, have you tried the sweet corn muffin recipe that gigivarnum gave me (and I made a video of)? It's got a lot fewer ingredients and I think if a person simply subbed out the corn bread flavor concentrate for blueberry concentrate and threw in some blueberries, that could be a winner (and a bit easier).

@ketoadmin I will have to try gigivarnum's recipe. I admit (sorry!) I have not seen that video, but will go do now! I've been a follower of Kristie Sullivan's for several years, and while she's pretty hard core about <20 total carbs per day, she is not shy about baking some pretty amazing things (coconut layer cake! Hershey Bar Copycat Cake!).
@ketoadmin I have made the cornbread muffins. Historically, corn bread was not made with sugar, but slathered with cane syrup. That being said, these will be pretty tasty with smoked pork ribs for Super Bowl fare!

@emmamark Did you make the corn muffins?? I'm going to make a batch for Memorial Day BBQ and plan to use bacon fat instead of butter, just to change things up a little! Since my original post, I've made the Gigi-Steve Sweet Corn Muffins several times and they are always delicious. The keep well in the refrigerator, too! (But they never last very long!) Warm them in the microwave for 15 seconds after removing from the 'fridge.
@nancy-curtis That reminds me, I'm do to make a batch again. Connor wants me to see if I could emulate "McRib" patties for dinner tonight. I think some corn bread would make a nice accompaniment. {yellow}:hungry:
