Chorizo and Egg Skillet (Mexican Breakfast)

This is the original version of the recipe, I change it up all the time. For example instead of water I'll use enchilada sauce, or heavy cream to make it in a gravy etc. Its a highly customizable meal. 

Ingredients:

1/2 cup diced onion 

Bell pepper diced

Jalapeno diced

1 diced small tomato (roma)

1 chorizo sausage (wrapper off) or meat of choice 

1/2 tsp chicken bouillon seasoning 

1 cup water (I use half cup)

Cheese of choice 

Eggs

 

Directions:

1) cook chorizo in a saucepan on medium high heat. If chorizo is less fatty add 1 tbsp olive oil 

2) once meat is cooked add veggies and cook till tender

3) add water (or liquid of choice) and bullion seasoning and reduce the salsa to desired consistency 

4) crack eggs add on top of salsa, sprinkle cheese on top everything. 

5) cover skillet and reduce heat

6) after about 5 min eggs will be like over medium, once eggs are cooked to your liking add little more cheese if desired and serve with sour cream, avocado,  or anything you like with a Mexican style breakfast. 

Different options:

This recipe goes really well with pork breakfast sausage in place of chorizo, when I do this I'll add low carb flour (carbquick) after the vegetables are cooked and then use heavy cream in place of water. Then continue recipe as written. 

Another delicious option is to substitute enchilada sauce in place of the water.

@calgaryguy I sure hope you like it as much as we do. I also hope I was able to explain everything well enough to understand / and how I actually do it. I know exactly what you mean, I cook breakfast on my days off but on work days I have a QUICK grab and go type that I throw together the night before. If you try this please let me know your thoughts.

  1. @scroggins So I used breakfast sausage instead of chorizo.  No jalapeños as my wife cannot eat them.  Red pepper instead of green.  Chicken stock instead of water and bullion.  Had it for supper today.  Most excellent, thanks for the recipe.

@calgaryguy thank you so much for letting me know that you tried it and enjoyed it. Your modifications sound great. It's one thing I love about this recipe, not a ton of ingredients and pretty simple to customize. 

Thank you again for letting me know, sometimes I get the feeling that my effort to share things falls on dead ears and wasting my time.
