Watched the High Falutin Low Carb episode where he tested lemon squares. He loved both recipes so I made both. I think the second recipe needs to be prebaked longer but we like them both. I got 24 squares out of each batch so the carb count is really, really low.

I think he's a nice guy, but I just find him really hard to watch. Just a little too over-the-top southern for my tastes. Also, there was one video where his neighbor was mowing the lawn and he went on a 5 minute diatribe about it (rather than just edit it out).
Long story short, if you feel like posting your favorite recipe, I'd love to see it -- but I'm not going to watch him to get to it. {yellow}:face:

First Recipe INGREDIENTS
1/2 cup butter, melted
1 3/4 cups almond flour, divided
1 cup powdered sweetener, divided
3 medium lemons
3 large eggs
INSTRUCTIONS
- Mix butter, 1 cup almond flour, 1/4 cup erythritol, and a pinch of salt. Press evenly into an 8×8″ parchment paper-lined baking dish. Bake for 20 minutes at 350 degrees F. Then, let cool for 10 minutes.
- Into a bowl, zest one of the lemons, then juice all 3 lemons, add the eggs, 3/4 cup sweetener, 3/4 cup almond flour & pinch of salt. Combine to make filling.
- Pour the filling onto the crust & bake for 25 minutes.
- Lett cool to room temp then pop in the fridge for 3 hours.

Second Recipe Ingredients
- Crust
- 1/2 cup melted butter (8 tablespoons)
- 1 1/4 cup almond flour
- 2 tablespoons sweetener(confectioners is preferable but granular works too)
- Filling
- 3 large eggs
- 2 large lemons, juiced (approximately 1/3 cup lemon juice)
- zest of 2 large lemon (approximately 2 tablespoons loosely packed zest)
- 3/4 cup sweetener(confectioners is preferable but granular works too)
- 1/3 cup coconut flour
Instructions
- For the filling: Combine all filling ingredients in a blender or food processor.
- Blend for 30 seconds until completely smooth.
- Refrigerate for 20 minutes to allow the filling to thicken.
- For the crust: Preheat oven to 350 degrees.
- Line an 8x8 pan with foil or parchment paper.
- Combine the melted butter, almond flour and swerve in a small bowl and press into the foil lined pan.
- Prebake crust for 10 - 15 minutes, it should not be firm just slightly beginning to brown around the edges.
- Remove crust and allow it to cool at least 10 minutes.
- Pour in filling and bake 18-20 minutes until the center is set (mine took almost 30).
- Allow bars to cool completely before slicing.
