Keto king posted this a while back.  i am going to try to modify it for hot dog buns:

Ingredients for the Keto King Buns:

1/2 cup of Oat Fiber (41g/1.45oz)
2/3 cup of Flaxseed Meal (70g/4.9oz) [try psyllium husk]
1.25 cups of Vital Wheat Gluten (190g/4.9oz)
1 teaspoon Salt (6g / 0.21oz)
0-4 Tablespoons powdered Sweetener (0 - 60g/4oz)
1/2 teaspoon Xanthan Gum (2.5g/0.88oz)

1 cup warm water (50-55C / 120-131F) (240ml/8.1oz)
1 Tablespoon INSTANT Yeast (8g/0.28oz)
1 teaspoon Honey (7g/0.25oz)
2 Eggs (lightly beaten) room temp.
2 Tablespoons softened Butter (30g/1.05oz)

Macros per each Keto Bun (assuming 9 buns):

Calories: 210 cal
Fat: 10g
Carbs: 3.9g Net Carbs (18g total carbs – 7.5g fibre – 6.6g sugar alcohols)
Protein: 18g

Beat eggs and set aside to warm up to room temp.

Mix together dry ingredients and set aside.

In a stand mixer with mixing paddle add water, honey and yeast then proof.
Add eggs and butter.
Add dry ingredients.
Set to low speed to incorporate the wet and dry ingredients.
Switch to dough hook.
Mix at 1/2 power for 7 minutes.
Take out dough and form into a shape that can be cut into 9 equal parts.
Form into desired shapes. If making buns put in muffin tins.
Cover with saran wrap sprayed with cooking oil

Put bowl of water in microwave and heat to boiling.
Put buns in microwave with warm water.
Replace water with freshly boiled water every 15 minutes for 2 hours. Be as quick as possible.
Preheat oven to 350.
Place on baking sheet.
Bake for 15 - 20 minutes.

I'm gonna be honest -- I'm not a huge Keto King fan.  Just way to much mugging for the camera and trying to act cool.

attempt number one was a dismal failure.  Made hot dog buns.  Buns were rising nicely - looking really light a fluffy.  Then on my 6th of 8 water replacements I hit cook instead of time ... and that was it - rock hard tubes of yuckiness.

@calgaryguy unless he posted it 4 years ago I don't think he was the original creator of that recipe. Been making that recipe for burger buns and loaves of bread for a few weeks now and was originally posted by diedre on youtube. The two bread videos were the only videos she posted for actual recipes iirc.

Just want to make sure the original person gets credit for the recipe I have been loving {yellow}:cool:

@dctravis Yeah, there is a whole lot of plagiarism in the keto community.  That really makes me sad -- especially when larger channels "steal" the recipes of smaller channels and don't give credit.

@ketoadmin Its always going to happen whether intentional or not. Either way, that bread recipe is pretty good. I've found mixing it in a bread maker gives me much better results, so I think I was kneading it too much in the stand mixed in my earlier attempts. I also tend to use allulose in it. It definitely needs the sweetener otherwise it kind of has a wierd taste to it.

@dctravis I do believe he credited her with the original recipe so that is my bad.  My wife is a cancer survivor and cannot do flax or chia in any form as they mess with her meds so I will have to adjust the recipe. I've got some more psyllium husk arriving today and am going to try that.  Has anyone had decent experience with doing something similar?

@calgaryguy I probably wont get the chance to make another batch of bread till Monday or Tuesday, but if you have any ideas for altered configurations I'd be happy to test one out for you to see if its successful or not. I had been debating about trying to get rid of the flaxseed myself but wasnt sure what a good replacement would be. When I get a chance, I'll play around with it and see if I can find any good replacements

As with my Donz Bunz recipe that Steve and I worked on, I was thinking about a combination of psyllium husk and protein powder, perhaps with some lupin flour thrown in for good measure.  Amazon should be delivering today and will give it a go and let you know.  Do you stick to to the 2 hour rise with replacing hot water every 15 minutes?  I do not have a bread maker so I will use my stand mixer.

I tried swapping water every 15 minutes initially, but out of a mixture of laziness and curiosity I stopped doing that. I switched to just heating up a bowl of water for about 5 minutes, removing it and placing the dough in the microwave for about an hour or more. Didn't really see much effect from doing it differently.

Now with the bread maker it does a series of mixes and rests that seem to work out well and if you want to get consistent bread results once you find a winning recipe, they are definitely worth it!

I'll have to try this in my combi-oven.  It has a bread setting where it set the oven to warm and injects a little steam.
