Too carby? You decide.
1 kilogram of ripe peaches (about 8 cups) pitted, diced with skin left on
1/2 cup of monkfruit
1 tsp cinnamon
1/2 tsp fresh grated nutmeg
1/2 tsp cloves
3/4 tsp guar gum
toss everything in a heavy pot and simmer for about 15 minutes.
smooth out with an emersion blender
let cool
my calculations put the carbs at 2 grams
per tablespoon.

I’ll probably need to do something similar with apples. Two of my four trees are getting ready to unload a ton of apples on me.
