Simple Mocha Fat Bomb

Just made these tonight.  

8 oz Cream Cheese

1 heaping tbs instant coffee

2 tbs allulose

2 tbs refined coconut oil

1 bar Lindt 85% chocolate bar (100 g)

good dash of cinnamon.

 

Whip cream cheese with hand mixer.

Melt the other ingredients in a bowl over boiling water.

Add melted stuff to cream cheese.

Whip it real good until it is light and fluffy.

Dollup it into your favourite silicone mold and chill until set.

@ketoadmin yes it does.  The amount I used does not make them very sweet which, to me, is a nice change from a standard chocolate fat bomb.

@valkyrie something you might think about having on hand if you do any quantity of chocolate baking.  A dash of instant coffee really makes the chocolate flavour pop.

Very true.  Many professional bakers know this trick.  I also use it from time to time in steak and rib rubs.

Being a coffee snob that prefers roasting her own beans, grinding and using a French press, freeze dried instant coffee just isn't on my radar. I keep forgetting to pick some up. LOL

Any particular brand that is better than the other?

@valkyrie I'm sure there are good and bad but I am a fresh ground snob as well.  I bought Maxwell House because it was on sale.  Maybe the boss @ketoadmin has a recommendation?

@ketoadmin I've done ribs and wings but I cannot say why I never tried steak.  Another thing to add to my list.  Will it never end?

Well, darnitall. Seems I don't have 85% Lindt on hand either. Just some 100% Ghirardelli cacao bars. Guess, I'll pick up both ingredients tomorrow and make it right. 🙂

These were good! Mine kinda tasted like chocolate cheesecake bites. I did get the instant coffee and the Lindt 85% for it, too.

I still hope to get around to these today.  Do they need to be stored in the freezer or will they stay solid in the fridge?

I didn't have a Lindt bar, so I used a Lily's milk chocolate bar.  Mistake.

Though everything melted nicely, when I went to combine it with the cream cheese, it created this strange viscous, clumpy stuff.  It tastes good and reminds me of a fudgesicle, but the texture is a bit off.  I suspect it was the sugar alcohols in the Lily's that caused it.

Let that be a lesson to all of us when making a recipe, the brand of an ingredient can often make a difference. {yellow}:nerd:
