@ketoadmin thanks for the report. Good point to remember. I don't use Lily's as they are too expensive in Canada. I keep mine in the freezer but I think they can survive in the fridge.

@ketoadmin Mine are in the fridge, they're holding their shape, no problem.
Also, mine were not quite as shiny and smooth as CalgaryGuy's appear to be.
Today, the coffee flavor is much stronger, which I really like. I'll be making it again soon with a few of my own tweaks. 🙂

@valkyrie Interesting note about the shiny-ness(is that really a word?) It might have something to do with how tempered the chocolate was. I had it in the double boiler until the sugar was mostly dissolved then let is site for a few minutes. However, I do not think that the shiny appearance has any effect on flavour. I'd be interested in reading about any tweaks you try.

I made these again today. SO I should have said HEAPING tablespoons full of refined coconut oil, not just tablespoons. Also, when you add the hot stuff to the cream cheese you need to whip really well. It should look like the picture below.

I actually ate a couple of my "failed" version of this last night and they still tasted great.
