@gigivarnum  Did you get the Rye Flavor Powder directly from King Arthur?  How much do you use?  Because I see the label says to add 1 tsp to 1 TB, yet the "serving size" is 1/4 tsp.  That could rack up the carbs rather quickly.

@seriousketo Since both *actual* wheat flour and rye flour weigh in at 5g of carbs per tbsp, and I use 2 tbsp per recipe of Diedre's bread, I'm not thinking this is not some bank-breaking carb monster ingredient, but I could always be wrong.

Rye Powder does *have* carbs, and the nutrition label must legally reflect that, but I'm gonna hazard a guess that they've rounded up. I just don't see how it's possible for 12×¼tsp servings (12g/tbsp) to be correct math, when the product's most non-keto ingredients would only work out to 5g/tbsp for the same volume.

So then, scaling up to a 1 tbsp standard: The product ingredients are rye flour (5g/tbsp standalone), acetic acid (apple cider vinegar has 2.2g carbs/cup, or .1375g/tbsp), natural flavors (I can't hazard a guess but I doubt they're chock-full of carbs), and naturally fermented lactic acid (buttermilk contains 12g/cup, or .75g/tbsp). Even if somehow you added the full carb count of every ingredient together (which is impossible since it would require the product to be made with 100% of each), you'd still end up with 5g+.1375g+.75g, or 5.8875g total carbs per tbsp., plus whatever nebulous contribution is made by those mysterious "natural flavors".

At two tbsp of rye powder per batch of bread, you're looking at somewhere in the realm of 12g added, split in 20 servings, or an additional .6g carbs per slice to make it rye. Yes, that's a proportionally significant increase from the original recipe nutrition data of 1g net carbs per slice for plain Deirdre's Bread, but still very low-carb and workable for a keto lifestyle, IMHO, if slightly less "clean" keto due to the inclusion of a small amount of wheat. So not celiac-friendly, but still arguably keto-friendly.

The King Arthur Baker's Hotline opens at 9am... If you're still concerned about the exact carb count per tablespoon you might give them a call.

@gigivarnum I have not tried that, although I did stop into King Arthur's store when I was last in Vermont.  It's a baker's heaven, if you are a carb lover.  I'll need to look up the Deli Rye Flavor Powder and try it out!
