I'm trying to create a keto "rice krispie" treat with the Promix protein puffs. Step 1 is to make a keto marshmallow. I took this recipe from All Day I Dream About Food (one of those websites with loads of text, pop-ups and other garbage). It tastes pretty good, but the question is how it will hold up to melting and then re-constituting.
This is an 8"x8" marshmallow brick:

Update. When these are melted, the consistency is nothing like real marshmallows. I'm I'm going to do rice krispie treats, I think I'll need to add the protein puffs right after whipping the marshmallows (before they've set).
