Grinding beef?

Out of curiosity, how many of you have a meat grinder?  I'm starting to play around with some custom blends of beef.  Yesterday I ground up some brisket at 70/30 and then made a smash burger out of it.  It was one of the best burgers I've ever had.  Tonight I'll be trying a recipe from ChefSteps for a "homemade Wagyu chopped steak" using the brisket grind.

I have a grinder attachment for my KitchenAid stand mixer (I used it to make my first ever batch of brats and used to use it to make home made relish which I may try keto-izing this fall).  I love it because I find store-bought ground beef to be over ground.  i like my burgers a bit chunky.  I also enjoy a 50/50 beef/pork mix.  The pork seems to add a lot of flavour.

Same here, I have meat grinder attachment my KitchenAid. Also, a manual grinder that's been the family for half a century. We used that one to grind venison, elk and home grown beef & pork.

I agree with CalgaryGuy and actually prefer the 50/50 beef & pork. Then cook up some bacon, chop it up and mix it in before grilling. {yellow}:hungry:

I haven't gotten adventurous with the meat grinder, could be dangerous. Ever since the first time I made the keto pepper bacon I've been using the smoker every weekend. Even keto-ized my grandfathers smoked salmon recipe. If I start grinding my own meats again...oh boy. Our butcher carries ostrich, alligator, goat and buffalo. Hmmmm
