I'm not trying to out-do CalgaryGuy with my new toy, but I had a viewer gift me this. I'm absolutely beside myself that someone would buy me one of these. This has been on my "maybe one day when I'm rich" list ever since I saw Nathan Myhrvold use this in some Modernist Cuisine videos.

I'll talk about it a bit on the next podcast, but essentially this guy (who wishes to remain anonymous to the rest of my viewers) said he'd like to buy me one. He had one and was interested in what I could do with it. I tried to talk him out of it and told him that just the offer meant the world to me. He insisted, so I relented. It's still pretty unbelievable...

Yikes and Wow!!! That’s been on my wish list for a long time. I have a freeze dryer and vacuum sealing my results is critical to the long-term storage of those items. I’ve had my eye on one of those for quite some time… It is just way out of my price range and reach however. Nice. Thank you Anonymous for showing that sometimes, nice people just do nice things.

@simpletruths I'd really like to get a freeze dryer for the sake of making spice blends. I'm working on an umami bomb dust recipe for adding to burgers or rubbing on steaks and to be able to freeze dry and then make a powder of beef would be awesome.

So, I've been playing around with this today. I made some pretty respectable dill pickles almost instantly. It helped that I had some brine left over from last weekend's canning. They were comparable to fridge pickles and crispy, but next time I need more vinegar, dill and pickle spice to ratchet up the flavor. I liked them a lot more than the ones I've done in my huge pressure cooker.
