Reuben Chaffle

gramsThe classic German sandwich, keto-fied.
Ingredients
1 large egg, beaten
1/2 cup shredded mozzarella
1/4 tsp caraway seeds
1 TB pork rind crumbs
1/2 TB brown mustard, like Dusseldorf
2 slices deli corned beef
1 slice Swiss cheese
2 TBS sauerkraut
Directions
- Mix egg, mozzarella, caraway seeds, pork rind crumbs and mustard together.
- Spoon or pour half of the batter onto a mini waffle maker (or split between two).
- Cook until you no longer see steam coming from your waffle maker, about 4-5 minutes.
- Remove to a cooling rack for 2-3 minutes and repeat steps 2 and 3 if you only have a single waffle maker).
- Assemble your Reuban as you like between the two chaffles. For the purposes of the macros below, I used 1 slice of swiss, 1/4 cup of sauerkraut, 2 slices of deli corned beef and a tablespoon of Thousand Island dressing (you can use mustard, mayo or the condiment of your choice).
- If you want, you can throw this in a toaster oven or put on a skillet/griddle to heat it up and crisp it up.

One thing I have really missed since making the switch to low carb life 3 years ago is a Rueben. Thank you for giving me back my favorite sandwich! The caraway seed gives the chaffle a rye flavor that gives you a true Rueben experience. I just made this again and added 1 tsp of pumpernickel meal to the chaffle batter. Best low carb/keto sandwich ever!

This Rueben chaffle is the real deal! I was born in Montreal, Quebec, and smoked meat ruled.. So, now on keto I can make my own “bread” and have that sandwich, whether smoked meat or Rueben.

Great recipe and no more missing my favorite sandwich. I accidentally picked up whole milk mozzarella cheese which threw the saturated fat pretty high but I went ahead and made the one sandwich because I hadn’t had a Reuben in so long. Before I make again, I’ll pick up the low fat cheese. I used 2 egg whites instead of 1 egg with yolk and added 1 tsp nutritional yeast. I like eggs but don’t want to taste them on my sandwich and there is no hint of an egg using the egg whites and the yeast. I will be using this for my regular sandwich bread as well. Thanks!
