Recently in my Instagram feed, I saw a post by ChiTownSuga of a corn dog maker that she had used to make keto corn dogs. For her batter, she used Good Dee’s Corn Free Bread Mix (see review). I was immediately intrigued.
I probably had my first corn dog around age 5. It was at the A&W Drive In in Sioux Falls, SD. I have been in love with them ever since. When I graduated from college into a crummy economy, I literally survived on a diet of corn dogs. I would buy a bag of 30 at Sam’s Club, and would eat two corn dogs for breakfast, two for lunch, and two for dinner — Monday through Friday.
You’d think that I would get sick of them, but I never did.
Since I began my weight loss journey in late 2018, I had not eaten a corn dog. And I expected I would probably never eat one again. So imagine my excitement upon seeing ChiTownSuga’s post. I immediately purchased the Smart Planet “Restaurant Classics” Corn Dog Maker and a pouch of Good Dee’s Corn Free Bread Mix.
Three things were immediately apparent to me upon lifting the lid to the corn dog maker: 1) There was a “waffle” diamond pattern on the top and bottom of each corn dog cavity — I wondered if this would make cleaning more difficult; 2) The cavities were smaller than a standard hot dog, about half to 2/3rds size; and 3) the slots for the sticks/skewers were very narrow in diameter — this was not going to accommodate traditional Popsicle sticks.
I whipped up a batch of the Corn Free Bread mix, poured it in the receptacles, added my sliced and skewered hot dogs, topped with more batter and closed the lid.
Three minutes later, I was eating corn dogs.
Sadly, the Good Dees batter did not seem designed for corn dogs. The outside was cooked well, but the batter inside was still moist. So I improvised my own keto corn dog batter and took another run at it. The results were wonderful and showed a tremendous amount of promise.
Clean-up was no more difficult than cleaning a waffle iron.
The Smart Planet Corn Dog Maker is going to be a lot of fun — and not just for corn dogs. I can imagine so many possibilities for making “on the go” hand held snacks, “hot pockets”, pizza pockets, and desserts. When I first bought this, I thought it would just be a novelty, but I can see this getting regular use in my keto kitchen.
