gramsThis recipe was submitted to me by one of my YouTube subscribers, Aaron Bailey. This particular chaffle has a great density to it — not too heavy, but enough that it will stand up to whatever sandwich you are making with it. Additionally, because it contains no extra seasoning, it can be used for pretty much any type of sandwich — from a PB&J to a burger.
Ingredients
1/2 cup shredded mozzarella
1/4 cup almond flour
1/8 tsp xanthan gum
1/8 tsp arrowroot flour
1 large egg, beaten
Directions
- Mix the dry ingredients together thoroughly, then add the beaten egg.
- Pour half the mixture into a mini waffle maker, or split between two.
- Cook for approximately 4 minutes or until you no longer see steam coming from your waffle maker.
- Remove to wire rack and allow to cool.

- In recipes with xanthan gum, always mix your dry ingredients before adding the egg to avoid clumping.
Hi! I have a question. It says 2 servings. It’s not for the total amount of the ingredients? I see they are cooked in two waffle makers. So if you ate both then net carbs are 4, fat: 34,
protein: 24, calories: 420 is this correct?
Also, is the arrowroot powder Keto? The laugh was on me. I thought I had it, measured out the 1/8 tsp., put it in the mixing bowl, and closed the container; it was tapioca powder!! I didn’t have xanthan gum either so I used flax seed powder. I didn’t have two wafflers. I made one regular size, cut it in the middle. I made a ham and gruyere cheese sandwich in the waffle iron and enjoyed it with kosher pickles. Good sandwich! Thank you for your channel and your readers for their great recipes.
Each “slice” is a serving, so if you are using two slices, your math is correct. Arrowroot can be consumed in moderation on a keto diet. It works great as a substitute for corn starch as a thickener.
This Aaron Bailey “sandwich” chaffle rapidly became my favorite, romanced by its firmer chew and crunchy bite. SOO good, and finally something to go with eggs and bacon that is actually better than “toast”. I’ve deleted the xanthan gum along the way and just kept the 1/8 Arrowroot flour, and it still holds up nicely. Great with a no-sugar jam or as a PB&J. Sometimes, as a change from eggs and bacon, I use a single chaffle and with some smoky sliced ham and a single slice of Swiss/gruyere, and have this crunchy tasty ham-n-cheese as a great breakfast or lunch sammy!! Is there really no cheese in this? I put a little mozzarella in and it was perfect.
There’s 1/2 cup mozzarella in the recipe. Is that not showing up on your screen?

Why do you have to use mozzarella cheese with these waffles chaffle, will chedder work or some other cheese ???????
You can use whatever you want to use. But mozzarella has a moisture content, fat amount and neutral flavor profile that makes it work especially well in a number of different chaffles.
This seems a little high in the net carb department especially if you are eating both servings as a sandwich.
However, just used this recipe to make my first EVER Chaffles and it was delicious. Looking forward to getting more use out of my Dash now.
Is there anything I can use as a substitute for arrowroot flour? I am not sure I have any other recipes that use it.
This wasn’t my original recipe, so I can’t say for sure what the purpose is. You could try subbing 1/2 tsp xanthan gum. However, I can tell you that arrowroot flour is a good thickener for sauces/gravies (instead of corn starch).
Can Chaffes be made “LOW SODIUM?” Both my wife and I need low carb and low sodium recipes. Chafflles look very inviting but too much sodium for us.
I can’t help you there. The ingredients are what they are.
In my opinion this is a good starter. I consider arrowroot and xantham to provide a solid (ha!) base. Maybe with garlic or something extra would be better.
Steve, I made these Chaffles for me and my husband. He loved them! He used his for a burger. Said he didn’t even need to add cheese to the burger because these Chaffles had a wonderful cheese flavor. Your recipes and videos are great! Thank you very much.
I’d just like to find the show where you tried 4 viewer chaffle recipes. One you didn’t even finish chewing before you were raving about it. I had recorded it and lost it thanks. One of the recipes had a little water in it
