Light Garlic Bread Chaffle

gramsThis recipe was submitted to me by one of my YouTube subscribers, Amy Henderson. This chaffle has a light, almost cakey, texture to it. I think this “bread” would go great on the side of some bacon and eggs — or if you skip the garlic powder, would be wonderful with a low carb jam.
Ingredients
1 oz (2 TB) cream cheese, melted
1 large egg, beaten
1 TB almond flour
1/4 tsp baking powder
1 Pinch of garlic powder
Directions
- Whisk together the melted cream cheese and beaten egg.
- Add the dry ingredients, and whisk until batter is smooth.
- Pour half of the batter into a mini waffle maker, or split between two.
- Cook for roughly 3 minutes or until you no longer see steam coming from the waffle maker.
- Remove to a wire rack and allow to cool.
I remove the garlic powder, added cinnamon powder and a teaspoon of erythritol. Ate them with butter and sweetened warm macerated strawberries. It was absolutely delicious!
It was heavenly!
Made it yesterday toasted them today. Who needs bread?
I made 2 (4x the batter) recipes left out the garlic in one and added extra garlic in the second batch. I got 11 2T chaffles out of each batch. Next time, I’m going to add a bit of ascorbic acid to each batch to prolong shelf life on the counter to about 2 weeks. My fridge is full of keto experiments…LOL
