gramsI would love to find the origin of this recipe so that I could give proper credit. It was submitted to me by YouTube subscriber, Diana Butler. She said it came from Sui Generis, but the only thing I could find with that name was some music videos. Regardless, this is the most “bread” tasting chaffle I’ve had so far. If you are missing white bread or if you think chaffles taste to eggy, this is the chaffle for you.
Ingredients
2 egg whites
1 oz (2 TB) cream cheese, melted
2 tsp water
1/4 tsp baking powder
1/4 cup almond flour
1 Pinch of salt (or garlic salt)
Directions
- Whisk together the egg whites, cream cheese and water.
- Add the baking powder, almond flour and salt (or garlic salt) and whisk until you have a smooth batter.
- Pour half of the batter into a mini waffle maker, or split between two.
- Cook for roughly 4 minutes or until you no longer see steam coming from the waffle maker.
- Move to a wire rack and allow to cool.

Im Carnivore, but once in awhile i want a little something ..about 2 times a year . I Tried some of your other once and I hated them ,too eggy but this was wonderful ..i have the pumkin waffle maker so this made a little over 4 . I ate 2 and was happy …are there any other non eggy waffles i may have missed …you do great ,Thanks

Love this one. I been adding 2tbps of coconut flour instead but going to see how well it does when I cut it back down to 1. Just wish there was recipes for larger amounts figured out
I have some ideas for this recipe — outside of chaffles. I think this could be the foundation for hotdog buns or Hawaiian rolls. If I can pull those off, you’ll definitely get the recipes.

ITS A WINNER and I’ll use it as my basic chaffle for simple sandwiches or jazz it up for sweet or savory. I had a pulled pork sandwich with a dash of no sugar Sweet Baby Rays BBQ sauce. Yummy! 😋 Next will be BLT’s and spice it up for mini pizzas. BTW I’m a Wisconsinite and in your neck of the woods often visiting my kids.

But, melted cream cheese? Do you put cream cheese in microwave to soften or can it be at room temperature?
A little warmer than room temp works best for mixing. I typically throw it in the microwave for about 10 seconds. Any more than that and it can sputter and pop, spreading cream cheese around the inside of your microwave.

Hi Steve, I have been gluten free for about 8 years and Keto for 1 1/2 years. I have made tried lots of gluten free/Keto breads and made many many Keto bread recipes. However I never realized how much I missed white bread until I tasted this chaffle recipe. For me they are the bomb. I felt like I was Bob from the movie “What About Bob?” in the dinner scene. I made a couple that I didn’t enjoy but tried this tonight. I made my first old-love grilled ham and cheese with these tonight and thought I died and went to heaven! Delicious! They toasted so beautifully in the skillet with butter, just like real bread. I think I’m going to need another mini dash or the large one! I did have way too much batter for some reason. Thank you for a ‘taste down memory lane.’ Wish I could post the pic I send to my hubby!

Can you make them as pancakes to get a nicer sandwich?
I’ve made them on the Dash griddle, and it changes the texture a bit — but actually worked well to create a little hot dog bun. The divots in the waffle iron create more surface area which gives you a crispier exterior, which I like. I’ve not made any of them as pancakes, though, so I’m not sure how they’d turn out.

I was just going to ask the same question about the macros because it says servings 2 but the macro info doesn’t say if it is for the 2 servings or for one .. I am presuming it is for one but would be good to be sure. Am planning on making pancakes because I don’t have a waffle iron at the moment and a drooling at the thought of a toasted cheese ‘sandwich’ with these yum.

One other thing.. I am wanting to double the recipe above. The ingredients changed except for the egg whites. Is that just an error in the program or should I stick to 2 egg whites?
They just added the “scale servings” option and set it to automatically turn on. Unfortunately, it doesn’t work all that well. You should double the egg whites as well.
My minor adjustments below yields 4 chaffles and keeps my mini dash from overflowing!
• You need a food scale and 1/3 measuring cup.
Follow recipe and directions as given using these minor adjustments:
106 grams liquid egg whites
1 oz (not 2 TB) cream cheese, melted
1 TB (not 2 tsp) water
1/8 tsp (not 1/4 tsp) baking powder
Set empty 1/3 measuring cup on scale and set to zero grams. Pour 43-45 grams batter into measuring cup on scale, then pour into chaffle maker. Cook as directed. Makes 4.

BFred, I see what you did there, tried it, and applaud your efforts! 4 chaffles instead of 2–that’s twice as good!
My only concerns were that even at 45 grams (my scale only goes in 5g increments) of batter, I still had overflow on 2 out of the 4 chaffles. I think scaling back to 40 g of batter per waffle is the way to go.
Also, 106 g of egg white is a LOT in proportion to the rest of the ingredients! It makes the chaffles tasting noticeably eggy, which goes against the intent of the Serious Keto White Bread Chaffle Challenge.
I tried scaling down to 60 g of egg white, which made a much less eggy chaffle. But I came up 20 g short of batter for the last chaffle. Next time I will try switching the cream cheese to a gram measurement and adding 20 g more cream cheese to make up the weight dif

SO GOOD! I just made this and then made them into little pizzas with Rao’s pizza sauce, cheese and a few pepperoni slices and I’m blown away! New favorite Chaffles!!!!

Out of curiosity, I tried this batter in my Dash mini griddle instead of the waffle maker and ended up with awesome “buns” that had a beautiful golden color on the bottom. They are a little thinner than regular hamburger buns – closer to a “Sandwhich Thins” style. My husband loves them! (He’s not a huge bread fan and he thinks chaffles are too much bread – as if there could be such a thing! ?) BTW, I am allergic to dairy so I simply substituted Kite Hill’s original style DF cream cheese and I can enjoy them as well. Not sure how the two compare since I cant taste the “real” thing. ? With organic eggs so scarce right now I was happy to find this recipe. I have two cartons of organic egg whites in the fridge and they were awesome for making this chaffle recipe. This is by far the most breadlike chaffle I have tasted. I love the traditional egg and cheese chaffles, but let’s face it, eggs and cheese aren’t bread. This IS bread! Almost a perfect imitation of white bread. You can add sweetener, cinnamon, nutmeg, whatever, to make it a more wafflelike chaffle. It is a very versatile recipe. Steve, how come you say it’s 2 carbs when 1/4 C of Almond Flour is 5 carbs
2 grams NET carbs per chaffle. When I did this recipe, the plug-in didn’t allow for all 4 macronutrient lables, so I just listed net carbs. They have since updated the plug-in, so I added TOTAL carbs as well.

Double the recipe to get 6. Freeze 4. ; )
Hi Steve, my husband and I discovered your channel recently and can’t wait to try your recipes! Have you tried adding xanthan gum to this? If so was it better and how much did you use?
I’m going to be doing a series soon on Chaffle Science, where I try every type of flour and add-in I can think of. Xanthan gum will be in the “add-in” video. I may also do a dedicated xantham gum video.
Here’s what I’ll tell you, though — 1/4 tsp is the best amount for a 2 chaffle batch. Mix it with your dry ingredients to avoid any clumping. You will get a little more chew and a silkier mouthfeel. More than 1/4 tsp in a batch and you start getting a slightly slimy mouthfeel.

Was having burgers last night for supper and decided to make some of these. I doubled your recipe and added 1 tsp each of: toasted sesame seeds, flax seeds, and poppy seeds. It made 8 thin chaffles!

I’m looking for a chaffel that gets a little crispy when toasted
In my experience, a chaffle recipe needs to contain mozzarella in order for it to crisp up.
Wow. I just made these. They ARE the most breadlike chaffle I have ever made. But I had one problem. This chaffle stuck to my dash mini. I have never had a problem with sticking. I added a teaspoon of mayonnaise to the 2nd chaffle which helped prevent sticking, but the taste of this chaffle is very delicate and the mayonnaise changed the flavor. So the next time I will add 1-2 teaspoons of some kind of oil. Right now I’m thinking coconut oil, but I’m worried about changing the soft bread flavor. BTW, the crumbs were absolutely delicious. Any suggestions?
Have you tried spraying a cooking spray before pouring your batter? I use the avocado oil Pam cooking spray. I don’t use it every time but I try too just in case.
I never use cooking spray.
So torn here. I am not sure if this is a white bread replacement for me. I need to try it a couple more times and then try it with some herbs added in perhaps. It does almost fool the brain into white bread and its texture is good. My wife says it’s better than the Costco keto bread to here (never tried). I will say, I told multiple people that these were Eggo waffles (cook a bit longer for firmness) and it fooled everyone. These legitimately taste just like ego waffles if cooked a little longer and butter/syrup is added. My kids loved them. Thanks for the recipie!

Some batches come out with extra (this wasn’t my original recipe). Feel free to make 3, if that’s your yield.
This is fantastic! It is my very first stab at making a chaffle and they were perfect. I have been craving Eggs Benedict, my all-time favorite brunch dish. Why go to all the trouble to make homemade stove top hollandaise and have inferior “bread”. Plus, you get the egg whites to use in the chaffle. This recipe is spot on!
Steve, I have been sharing my keto/low carb meals with people for more than 8 years. I have tried different recipes and altered them to try and find the perfect bread. This is the closest to real bread I have tried and the taste is great. I’m going to work on it to try and make it a bit thicker, more like a bun. But kudos to you and the person who originally made the recipe. I am in love with it!!
Coincidentally, I’m working on it as well (in the hopes that I can get a batter that would work as a hotdog bun). I’ll tell you this: if you make ultra-fine almond flour (I have a YouTube video on this), you CANNOT use it 1 for 1 replacing regular almond flour. The batter will be WAY too thick and you won’t even get two chaffles out of it. I’m hoping I can dial in the right amount, then add a little yeast for flavor, then a thickening agent to give it a little more chew (guar gum, xanthan gum, or vital wheat gluten).
I made this recipe to kill the Mc Griddle craving I had been having. All I did was drizzle with a little Lakanto maple syrup and top with fried egg and bacon. Delicious 😋 Mc Chaffle! Love 💕 your recipes!
This recipe is really good! I wanted a little more substantial bread so I doubled the baking powder, water and the almond flour. Everything else is the same. This way holds up very well to a large burger! We are definitely fans!
This is by far the very best chaffle I’ve tried for sandwiches. A real game-changer for me after so many nightmarishly eggy keto breads. Without any additions, these chaffles are perfect for either savory or sweet spreads and sandwich fillings. My go-to is sandwich pepperoni and provolone with spicy mayo. Been making these for about 4 months, have changed my keto lifestyle drastically. For Christmas my in-laws got us 2 of the Dash Mini-griddle makers; last night the wife and I decided to try this recipe directly in the griddle and it was AMAZING. We didn’t mind the “pockets” on the chaffles but the smooth surface and the awesome recipe really made it feel like we were doing something wrong/antiketo.
Game changer for me! I got 3 fluffy chaffles from the recipe. I tweaked it just a bit….added about 1/2 tsp erithrytol, 1/2 TBSP coconut flour (to thicken up batter a bit more) and also added a bit of pea protein powder to up the protein content. Very pleased with the outcome. Thx for the recipe Steve!
The last time I did it, I got 3 chaffles too. I may need to update the recipe for that if I keep getting 3 chaffles…
I’ve been doing low carb for about 5 months now. I purchased the Dash mini around the same time to make chaffles since I didn’t have a waffle maker. The first two recipes that I tried I did not like at all, so I pretty much shelved my Dash until recently.
I have been subscribed to your YouTube channel for a few months and have only made a few of your recipes. I decided to go back and check out some older ones and found a bunch on chaffles. I agree with everyone else that this is a total game changer. The past few days my Dash has been working overtime, and I just ordered the Dash no-drip. My non-keto wife tried these and said that they were ok but have no taste, so I’m going to experiment with adding yeast that is in my freezer from pre-keto early pandemic bread baking.

Can the quantities be multiplied? If so, what is the max. Some recipes break down at some point. I would like to make a big batch to keep in the freezer.

I just tripled the recipe and got 12 chaffles.
I did run into a sticking problem. I have the mini dash waffle maker. With coconut spray and without, I had to finesse the chaffles out of the dash. Many were pretty mangled, but they will be eaten!!
Plan to make keto custard with the yolks.
When doing multiple chaffles in the Dash mini, make sure you give the Dash time to reheat before adding more batter. Cooling of the Dash has caused sticking for me as well.
4X recipe made 10 belgian style. Turned out great. Didn’t adjust anything in the recipe except added a sprinkle of stevia for personal preference.
I use a standard waffle maker and made the following adjustments. 3 table spoons of egg white out of the carton. No water. I also use whipped cream cheese and skip the warming step. Works great
Really delicious! I followed the recipe ingredient amounts but used a Magic Bullet to do the mixing. Maybe it incorporated enough air that I got 3 normal and 1 small chaffle from this recipe. Cooked the 1st 3 as is and served with butter and sliced strawberries. Before pouring the final liquid into the chaffle maker I added a good dash of cinnamon. Next I think I’ll try this chaffle recipe to make egg salad sandwiches.

I am newer to Keto and your YouTube channel has helped me the most. I made this recipe and the only thing I added was Everything Bagel seasoning. These are my go-to Chaffles for a bread replacement. Finally, I do not miss bread! I eat these everyday for a sandwich bread for lunch. They also hold up fantastically as a hamburger bun. I used to love onion hamburger buns and felt I was missing out when my non-Keto husband would eat it with his hamburgers. Not anymore… these are the perfect replacement. Do I HAVE to WHISK the batter and not mix in a blender? Because it’s Very runny… like water/milk consistency, not batter-like at all.

Just made a quadruple recipe using my regular waffle baker so I can have sandwich style bread. Here are a couple of tweaks…I add 1 Tbsp sweetener such as allulose or 3 drops sucralose (pure drops) and 1 tsp. instant dry yeast. This ups the taste dramatically. Thanks again Steve.
Denise, I don’t know if you’ll ever see this since 2 years have gone by, but could you please clarify whether or not your additions of 1 T. Allulose and 1 tsp. instant dry yeast are for the “quadruple” recipe or for just one of the recipe which yields 2-3 chaffles (in which case, I would quarter the T. and tsp.)?
Just wanted you to know, I continue to bake these every week. I mix up a “dry mix” in storage jars, in the fridge, so that I only have to add the cream cheese and egg whites. They are good for all kinds of sandwiches and just toasted with sugar free syrup. Thanks again for being an awesome low carb recipe developer!

It will turn out differently, but if you want to, go ahead. Alternatively, take the yolks and make some homemade mayonnaise (or add to your next batch of scrambled eggs to make them richer).
This is my go-to chaffle bread recipe for any kind of sandwich. It really is awesome. THANK YOU!!! Now we are flirting with “carnivore”. I saw that you have a Paffle recipe but I wonder if I just switch out the almond flour for Crushed pork rinds it will have the same breadlike quality. I am going to try it out. I take them to Buffalo Wild Wings as my burger buns! ( did you know that you can order just the burger patties and cheese and bacon on the side? And its way cheaper than ordering the same burger from the menu w/o the buns!)
I’m switching to carnivore too and wondering if you tried switching out the almond flour for pork panko and, if so, how much did it affect the texture and taste? I’ve tried the paffle and they’re okay, but too different in the texture.

Made it; quadrupled it; substituted flax meal for part because I was short on almond flour; turned out perfect; 10 large belgian style waffles for a freezer pull; delicious! I’m new to Keto.
