gramsWhen I initially reviewed the Smart Planet Corn Dog Maker (link), I made a makeshift keto corn dog batter on the fly. It was decent, but I felt I could do better. This recipe is the “better batter”.
Ingredients
1/4 cup Birch Benders Keto pancake and waffle mix
1/2 cup shredded mozzarella
2 tsp coconut flour
1/2 tsp baking powder
2 large eggs
40 drops OOOFlavors corn bread concentrate (1/3 tsp)
1/2 tsp sugar free honey (see note below)
3 franks all beef franks, cut in half the short way
Directions
- Pulse pancake mix, mozzarella, coconut flour, and baking powder together in a food processor until it resembles bread crumbs (6-7 pulses).
- Add the egg, corn bread concentrate and sugar free honey until it is a smooth batter (roughly 10 seconds).
- Transfer the batter to a plastic sandwich bag and cut off one corner to create a disposable piping bag (see the video below on how to do this).
- Pipe the batter into each of the slots on your preheated corn dog maker, filling them between halfway and 2/3rds full.
- Gently press the hot dog halves into the batter so that the batter comes up each side, then pipe a strip of batter on top of each hot dog. You don’t need to be super precise with this step, as the batter will rise up to surround the dogs.
- Cook until you no longer see steam coming from the corn dog maker. This is usually in the 6 minute time frame.
- Remove to a wire rack to let cool for 1-2 minutes then serve.

Notes
- I do not use sticks for these corn dogs as I find them to be a waste of time and effort.
- IMPORTANT: The sugar free honey I use in this video contains maltitol. Though this is an alcohol sugar, it has a high glycemic index and may affect your blood sugar. I have not found the amount used in this recipe to be enough to knock me out of ketosis, everyone is different. If you want to error on the side of caution, I would suggest not including it in the batter.
Hi Steve. I tried your recipe and it was very good! I am diabetic and the only way I stay within my levels is absolutely NO sugar, grains, potatoes, rice, etc. I have to live a strict Keto diet. before I found your channel, my menu was a lot of eggs, meat and salads. I am grateful I found your channel. I get to cook again and love the variety.
That being said, I found the sugar free honey in the amount used, did not effect my blood sugar in the slightest. Thank you so much for that!
BTW, I did find another corn Extract from Nature’s Flavors. It has a strong corn flavor. I made the corn dogs again and a few drops took this recipe over the top.

I found it on https://www.naturesflavors.com/ and the one I used was Sweet Corn Flavor Extract (Organic). I used about 5 drops. It made my house smell like corn on the cob.
I am going to have to check into that. It could be a lot more cost effective for my tortilla recipe. Thanks for the info!

I said it before, variety is the spice of truly LIVING a keto lifestyle. Otherwise it’s just another limiting, limited set of “easy” things (read bacon) that people tend to overdo then burn out.

Random question, do you feel like the hot dogs, I’m assuming they’re straight out of the package, get heated thoroughly cooking them in this manner? I prefer a grilled dog like, always heh, but at the very least, the doggie must be hawt!

Cook yourself up some little burger logs, bout there size of your half dogs.
Pipe in the under crust, gently press burger patties into the batter then lay cheese over the “patty”, add strips of condiments, pickles, little onion strips, even sliced tomato? More cheese then the cover with the final pipe of crust and cook! VOILA! Hamburger Dog! So little mess! ?

I typically take the hot dogs out of the fridge while I’m preparing my batter and preheating the corn-dogger, so they get a little closer to room temp by the time I cook them. I find that during the 5-6 minutes in the corn dog maker, they are essentially steam cooking — and that gets them plenty hot.

One should not take sleep medication before reading recipes. It appears I awoke and continued to read, then write you a question which seems reasonable.
Then came the rabid ranting of a semi-conscious lunatic at almost 5 a.m. I was mortified when I realized that wasn’t a dream. Then I laughed so hard when I read what I wrote, oh my gosh, I’m so sorry but I think you have a pretty good sense of humor. Fingers crossed!

Can you use this corn dog machine to just make a hot dog roll without the dog inside?
I doubt it. Even with the proper dough, it would cook to quickly on the outside.
Can you make this without corn dog maker ?
You could probably do them in little muffin cups with hot dog bites.
Hi Steve, glad your garden is doing well! I just made this recipe using Amoretti sweet corn extract (a little less than 1/2t.) and Nature’s Hollow honey substitute. It has xylitol and no maltitol. I’ve used it on chaffles, etc and it’s yummy and thick like honey
Unfortunately, xylitol does quite the number on my tummy.
My extremely low carb diet includes NY system style hot dogs chopped in a bowl. I’d like to know if you’ve tried making hot dog buns in the corn dog maker. I’ve added the maker to my Xmas wish list, and my intent is hot dog buns (and now your chocolate Twinkies as well). Hoping you keep doing what you’re doing, and do the legwork for me!
