Cream Cheese Filled Pumpkin “Twinkie”

gramsThis recipe uses a corn dog maker to create a wonderful autumn snack — a cream cheese, pumpkin pie flavored “Twinkie”. It’s delicious, it’s keto, and it’s just 2g of net carbs per serving.
Ingredients
1 TB coconut flour
1 TB almond flour
1/2 cup shredded mozzarella
2 teaspoons granular sweetener (I prefer BochaSweet)
1/4 tsp ground cinnamon
1/2 tsp baking powder
4 TBS keto pumpkin pie filling (recipe here)
2 large eggs
1 TB sour cream
40 drops liquid stevia (1/3 tsp)
3 oz cream cheese, cut into 6 “logs” and frozen
Directions
- Put coconut flour, almond flour, mozzarella, sweetener, cinnamon and baking powder in a food processor and pulse until it resembles bread crumbs (6-8 pulses).
- Add eggs, sour cream, pumpkin pie filling and stevia and process until the batter is smooth (10 seconds).
- Transfer batter a piping bag or a sandwich bag with the end cut off (see video for explanation).
- Pipe batter into corn dog maker, filling each cavity about 2/3rds full.
- Press frozen cream cheese logs into the batter until it comes up the sides (see video for explanation). Top cream cheese with more batter.
- Close lid and cook for about 7 minutes, or until steam is barely coming out of the corn dog maker.
- Remove to a wire rack and allow to cool for at least 10 minutes before serving.

I do not have a corn dog maker. Do you have an idea for something like this but in a bread or cake pan? Family party I am going to wants me to bring keto finger foods, any ideas? I know I can look on the internet but I really like your videos and what you prepare and when you show how to make something you have all your ingredients right there. I haven’t seen anything recently, where are you?
It’s possible you could do something in an air fryer using silicone molds (like mini-muffin molds). I tried this with some chocolate batter and cream cheese nuggets and it turned out alright at 360F for 6 minutes. I’m still perfecting the recipe though, which is why I haven’t published it.
