gramsThis recipe was submitted to me by an Instagram follower, Jack Johnson. Let me tell you, Jack nailed it with this one. The flavor is 100% chicken and waffles in a convenient keto-friendly package. Served with a little sugar free syrup, this is some great comfort food.
Ingredients
2/3 cup shredded mozzarella
1/3 cup fresh grated parmesan
1 TB nutritional yeast
1 TB unflavored whey protein isolate
1 large egg
1 large egg white
2 TB sugar free “maple” syrup
2 1/2 oz canned chicken breast
Directions
- Combine the mozzarella, parmesan, nutritional yeast, and whey protein to a food processor and pulse 7-8 times or until the mixture resembles crumbs.
- Add the egg, egg white, and syrup and process until a relatively smooth batter forms.
- Add the chicken and pulse 2-3 times to incorporate the meat.
- Add 1/4 of the batter to a Dash mini or all of the batter to a full size waffle maker and cook until you no longer see steam, approximately 5 minutes.
- Remove to a cooling rack for 2-3 minutes before serving.

- Nutritional info is based upon a single chaffle. If you don’t over-fill the Dash mini, this recipe will yield four chaffles.

this looks really yummy. Is there an alternative to the whey protein isolate?
You could leave it out, but I’m going to be using it a lot in recipes going forward. It provides lift and structure (creating a more “waffle” like texture). It can also be used as a breading when you’re frying something. If you choose to leave it out, add 1/4 tsp baking powder. Just be aware that it’s going to turn out differently.
I bet this would be extra-insane if WITH the idea of using a rotisserie chicken, you included a bit of the roasted/charred skin 🙂 Oh god…
Just made these and they were amazing!! Used rotisserie chicken breast and it made 5 Chaffles. YUMMY!!!
I adapted this to ingredients on hand – almond flour instead of the yeast and whey – added baking powder and used two full eggs…Wow. Took a full ten minutes to cook in my old Belgian waffler, but so, so good! I love how versatile and forgiving chaffle recipies are.
