I know that to be called a “chaffle” a recipe is supposed to have cheese in it, but it seems that lately, the term “chaffle” is applied to any low carb or keto waffle. I’ve had a number of requests from people with dairy allergies to come up with a “chaffle” that they can eat. This base recipe provides a jumping off point to create a wide variety of chaffles — sweet or savory. Or you can just use the recipe as-is as bread.

In the video you can see an example of a sweet chaffle I made by adding 1/4 tsp of maple stevia as well as a savory chaffle I made with some chipotle, onion and garlic hemp hearts.

Ingredients

  • 1 large egg

  • 1 TB coconut cream *see notes

  • 2 TB almond butter

  • 1/4 tsp xanthan gum

  • 1/4 tsp baking powder

  • 1 pinch salt

Directions

  • Whisk egg in a bowl or Pyrex measuring cup. Add the coconut cream and almond butter and whisk until smooth.
  • Combine the xanthan gum, baking powder and salt in a small bowl. Mix to ensure that the xanthan gum is distributed. Then whisk these dry ingredients into your batter.
  • Divide the batter between two Dash Mini waffle makers and cook for 3 minutes.
  • Remove to a cooling rack for at least 2-3 minutes before serving.

Notes

  • Macros are for 1 chaffle
  • To get coconut cream, open the bottom of a can of coconut milk and drain out the coconut water, leaving just the cream in the can.

    Hello Steve,
    I started watching your serious keto videos, and must say, they’re GREAT!
    Informative, at times funny and also love the scientific angle you sometimes include.
    Reminiscent of Alton Brown.
    I can’t use cheese too much, it causes production of mucus in my upper respiratory.
    I eat butter, that’s no problem but not cheese, and I love cheese. Sometimes I just say screw it, when a cheese platter comes out, and hack my head off for the next 2-3 days.
    Anyway, you have so many chaffle recipes out there, by chance do you have one that does not include cheese? I saw the dairy-free one, but don’t want to go down that route. I want to make them for burgers and will be making cheese-burgers to get cheese that way. Keep up the great keto videos.

  3. I made your egg hater chaffles and added a slight difference in cheese used parmasen and mozzarella slices for added crunch..wow it was not eggy at all.
