Keto “Puppy Chow”

gramsThis recipe was submitted to me from Facebook follower, Molly Block and it totally nails the sweet, salty, peanut butter and chocolate taste of the snack mix traditionally made with Chex cereal. To say this is addicting is an understatement. You may want to portion it out into small snack sized baggies to keep you from eating it all in one sitting.
Ingredients
1 bag pork rinds (3 – 3.5 oz)
4 TB butter (preferably salted)
1/4 cup coconut oil
1/8 tsp vanilla extract
3 TB sweetener (such as Swerve granular)
1/4 cup natural peanut butter
3 TB unsweetened dark cocoa powder
1 TB Swerve confectioners
Directions
- Break up the pork rinds into bite sized pieces in a large bowl, then set aside.
- Melt the butter and coconut oil in a saucepan over low heat, then whisk in the vanilla extract and sweetener.
- Once the sweetener has dissolved, whisk in the peanut butter and cocoa powder. Continue to whisk for a minute or two, until there the sauce is completely smooth.
- Pour the chocolate sauce over the pork rinds and mix with a large spoon, spatula or your hands (wearing plastic gloves) until thoroughly coated.
- Spread the pork rinds on a cookie sheet, lined with parchment paper or a silicone mat. Dust with 1 TB of Swerve confectioners (see video for a tip). Chill for at least one hour for the chocolate to set.
- Transfer the “puppy chow” to a storage container or zip-loc bag and store in the fridge.

Hi Steve, love your channel. A while back you did a video about the effects of a massive cheat day for your B-day. It was the one where basically after the day, your weight jumped 5-6 lbs and then you spent the next week getting back to baseline. Can you do a video on what is going on with the body when that occurs? I am interested in the science side of the house. Does the body hold a bunch of water, Did I really store 5 lbs of fat? Basically, our american holiday system seems to set low-carbers/keto people up for failure. At least once a month there seems to be an event that blows the ketones burning program out of the water.
I generally shy away from the science and health stuff because: 1) I am not qualified to give that sort of advice, and 2) Talking about health stuff (other than my experiments on myself) open me up to potential liability. I’m pretty sure most of it is water weight. If I have more than 2 glasses of wine on any given evening, I’ll see my weight swing up by 1-2 lbs regardless of how much or how little I eat. If I don’t drink anything the next day, I’ll drop that same weight, regardless of how much or how little I eat.

Thanks for this addition to all your incredible recipes, Steve. Can you give an approximation of how much a tenth of the batch would be? Maybe about 1/4 cup? Thanks.
It’s hard to give a volume measurement on something like this since piece sizes are going to be different. If you have a scale, weigh out 1 oz of the mix. This recipe yields around 11 oz for me, so I conservatively said that there are 10 servings.
Soooooo I just made these yesterday and everyone loved them. So much for the 1 serving size. Yeah, this is definitely keto crack cocaine. I probably shouldn’t have made these. Thanks Steve! Hahah.
I’m going to have to have a family member hide my batch from me. I ate enough of it watching a movie last night that I almost knocked myself out of ketosis (fortunately, I still had a blood ketone reading of .5 this morning). So yeah, this stuff is addicting.

I made this yesterday and it is indeed fantastic! And, as you said, addictive. I was thinking about it when I went to bed and when I woke up this morning. I may try to make it less addictive by skipping the peanut butter, which is the second best processed food ever devised by humans. Cheese being number one.
Hello steve, I was just wondering how much is a serving. To get 10 serving from this recipe, the serving size must be really small. I just want to make sure I do not overdue it.
Serving size is 1 oz. It had to do serving size by weight because volume could be thrown off by the size of the nuggets.
I was pleasantly surprised how the pork rinds resembled Chex mix! I used baked pork rinds. I will use refined coconut oil next time to avoid the slight coconut taste. But the chocolate and peanut butter and powdered sugar definitely shine.

Thank you very much for the recipe. I have two questions for you, would MCT oil work in place of the coconut oil (I do not like the taste of coconut oil in baked goods) and second would your blanched almond butter work in place of the peanut butter (just wondering if that might be a nice change of flavor as well)
For the MCT oil, I’ll say “probably”. For the blanched almond butter, I think that will make this not nearly as flavorful — but I really like the combo of peanut butter and chocolate.

Update: I just made a new batch and mixed in your Toffee Almonds / Brittle into the bag with it. Chex mix, eat your heart out.

It depends on the moisture content of the queso fresco. Most store bought stuff is pretty low moisture…

I made this last night and all I have to say is “Wow, wow, wow.” I was expecting an off taste with the pork rinds and the coconut oil, and while there was a slight coconut flavor, you would never know these were pork rinds. If I make this again I might try refined oil, I’ve heard it doesn’t have as strong as a coconut flavor. Coating the pieces in the chocolate batter was a bit time consuming because I wanted every single piece FULLY coated in chocolate, but every second was worth it. These are just amazing and your warnings are 100% accurate. Thanks for sharing.
