We used to buy Palmetto pimento cheese spread/dip at Costco and thought it was pretty good — until we made our own. This appetizer is super-keto, remarkably easy to make, and delightfully delicious. Once you try this (especially with my keto sesame crackers), you’ll never buy store bought again. This recipe can be made by hand, with a hand mixer, or a stand mixer.

Ingredients

  • 2 cups extra sharp cheddar cheese, shredded (185g)

  • 8 oz cream cheese, softened and cubed (220g)

  • 1/2 cup mayonnaise (110g)

  • 1/4 tsp smoked paprika (1g)

  • 1/4 tsp cayenne powder (1g)

  • 1/4 tsp onion powder (1g)

  • 1/4 tsp garlic powder (1g)

  • 4 jar jar of pimentos, drained (85g) *see note

Directions

  • Combine all ingredient except the pimentos in a large mixing bowl.
  • Using a hand mixer or a stand mixer with a paddle attachment, beat at medium speed until combined.
  • Add the pimentos and continue to beat until they are thoroughly distributed.
  • Serve immediately or chill.

  • A 4oz jar of pimentos will yield 3 oz (85g) of drained pimentos

    Hi Steve! Just to let you know the Print button at top is not working. Also notice in the ingredient list for the pimento’s you have “jar” listed 2x, but I think you mean “oz. jar”. As always thank you for another great recipe!!

  2. Looks tasty! Don’t have pimentos now (and shopping during pandemic is far less frequent). Googled pimentos and looks like I can sub in my homemade roasted red peppers I have frozen. Going to try this recipe for sure. Subscribed to YT today.

Thanks so much for including weight measurements in grams! I love to cook by weight but usually have to find this information myself, extending the time it takes to make a recipe.

    Please DO quit your day job! After reading your mini cv above, I can see why you are so good at this: You know your audience! Low-carbers, while a fun breed, ARE pretty serious about their keto cooking & baking! Almond flour & Swerve are not the same price as regular old flour & sugar, and I for one, appreciate your “serious” approach.
    My husband and I loved your sausage-making video, and since he has made sausage before, and has the equipment, we’re going to try that, too! You’re videos are very addicting – you make it all look simple!

    This is just my personal taste, but I use small diced red bell pepper instead of the jarred pimento. Yum!
