gramsI love recipes that are easy to make and pack a ton of flavor. Tzatziki falls right into that category. This is a wonderful accompaniment to my Turkish Stuffed Flatbread recipe.
Ingredients
2 cups grated cucumber (270g)
1.5 cups full fat Greek yogurt (340g)
2 TB chopped dill weed
1 TB lemon juice
1-3 cloves garlic (minced or pressed)
.5 tsp sea salt
1 TB extra virgin olive oil
Directions
- Using a box grater or food process, grate 2 cups of cucumber. Squeeze the liquid out of the cucumber using cheesecloth, a paint strainer bag or a nut milk bag, then set aside.
- In a medium sized mixing bowl, combine the remaining ingredients, mixing with a spatula.
- Stir in the grated cucumber with a spatula.
- Serve immediately or better yet, allow the flavors to come together for a couple of hours (or overnight) in the fridge.
