I love recipes that are easy to make and pack a ton of flavor. Tzatziki falls right into that category. This is a wonderful accompaniment to my Turkish Stuffed Flatbread recipe.

Ingredients

  • 2 cups grated cucumber (270g)

  • 1.5 cups full fat Greek yogurt (340g)

  • 2 TB chopped dill weed

  • 1 TB lemon juice

  • 1-3 cloves garlic (minced or pressed)

  • .5 tsp sea salt

  • 1 TB extra virgin olive oil

Directions

  • Using a box grater or food process, grate 2 cups of cucumber. Squeeze the liquid out of the cucumber using cheesecloth, a paint strainer bag or a nut milk bag, then set aside.
  • In a medium sized mixing bowl, combine the remaining ingredients, mixing with a spatula.
  • Stir in the grated cucumber with a spatula.
  • Serve immediately or better yet, allow the flavors to come together for a couple of hours (or overnight) in the fridge.
