gramsWith this recipe, you can create “straight up” granola to use as a cereal or yogurt topping, or you can make granola bars or bites. These are so easy to make and such a delightful treat that even non-keto people will gobble them up.
Ingredients
1 cup sliced almonds (90g)
1 cup pecan pieces (110g)
1/2 cup shelled pumpkin seeds / pepitas (75g)
1 cup unsweetened shredded coconut (80g)
1/2 cup liquid egg white (120mL)
15 drops liquid stevia (approx 1/4 tsp)
1/4 cup BochaSweet (54g)
1 tsp sea salt (optional)
1/2 tsp cinnamon (optional)
Directions
- Preheat oven to 250F / 122C
- In a medium sized mixing bowl, combine almonds, pecans, pumpkin seeds, and coconut.
- In a separate bowl or Pyrex measuring cup, combine egg white and liquid stevia. Whisk until frothy. Add the BochaSweet and whisk until all the the egg white is foam.
- Pour the egg white mixture into the bowl with the dry ingredients and mix with a spatula until thoroughly combined. If adding salt and/or cinnamon, mix that in at this time as well.
- If making granola, spread the mixture out on a cookie sheet lined with parchment paper or a silicone mat.
- If making bars or bites, spoon the mixture into a silicone mold, making sure to pack it down.
- Bake for 90 minutes, rotating the tray(s) at the halfway point to ensure even baking.
- Allow the granola to cool for at least 30 minutes so that it can firm up.

Notes
- Nutritional information is based on a serving size of 1 oz (30g). This would be equal to two granola “bites” from the video.
- If your granola is not coming out crunchy, you may want to check your oven’s calibration. See this video for information. Alternatively, you could turn off your oven at the 90 minute mark and let the granola remain in the oven for an additional 30 minutes.
Looks great, Steve! Hubby woukd love granola. This seems really easy and fast the addition of coconut sounds tasty.
If I made bars, I would probably use my mini muffin pan for bites. And I would substitute Allulose for the Boca sweet. I am seeing comments that that’s a good substitution.

Be aware that allulose has lowest browning temperature of any sweetener. I’ve heard it can begin caramelizing at as low as 150F. This has the potential to impact the flavor of the recipe.

Oh I like the look of this! I’ll be making some this weekend as I have been craving a little crunch and this s will hit the spot and offer a nice alternative for a snack or breakfast with some Fage 5%. Could I use just bocha sweet and no stevia? I don’t know what the deal is but I have the same issue with stevia that some people have with sweet potatoes, in that the taste in my mouth is nasty.
You can skip the stevia. It will be less sweet, obviously. If it’s not sweet enough for you, you could up the BochaSweet by a tablespoon (I think) without having an impact on texture. It might take a bit longer for the granola to crisp up, though.
Could you use a different sweetner if you didn’t have Boca swee
I’m just not a fan of any of the erythritol sweeteners. You could try one, but I can’t guarantee the results.
I used the lakanto Golden monk fruit/erythritol sweetener blend and it turned out well (no cooling aftertaste). I actually used 1/4 c + 2tbsp to make it sweeter. I personally would not use erythritol by itself.

Noticed after I made them. I put them in snack size zip bags for portion control. I’m a teacher and we are the worst at reading directions:)……. Part of my weekly meal prep. FANTASTIC with some Chia Seed pudding.

I made this and it was amazing but in a moment of pure genius I put sugar free chocolate chopped up in the mix and then tossed it in the oven forgetting that chocolate melts. I ended up with chocolate granola because I stirred everything halfway through. Still a very solid granola recipe.
I’ve made these three times so far. I don’t eat bars or snack but these are so delicious and can be a meal substitute. I made them the first time following exactly, then second time I didn’t have enough pecans so I added sesame seeds. They were still good, but a little bitter. In the oven now is the original recipe except substituting walnuts for pecans because they were the only organics at the store. Once again they smell great! Thank you for all your hard work!
Making a kind of “kitchen sink” ingredient version. I like to experiment. Added pecans, walnuts,sunflower seeds, pepitas, slivered almonds and unsweetened flake coconut. Eagerly awaiting the results! Been jonesing for a keto granola recipe. Thanks, Steve
I’ve made this twice since discovering the recipe last week. LOVE IT! Only problem is, my husband ate about three cups of it in one day. Oops! BTW, I made it with Erythritol, and it was excellent. (I made your nut clusters with Bocha Sweet, however!) Keep those recipes coming!
I’ve make these a couple of times now with apple pie spice(1 1/2 tsp) instead of cinnamon and 1 tsp of the lorann Carmel (super strength) flavoring. Delicious. Thanks Steve for the recipe, you’ve saved me a lot of money.(I also used the golden lakanto monk fruit/erythritol blend since I didn’t have the bocasweet). I plan on adding different extracts In future batches to try new flavors.

Bocha Sweet can be expensive, as you say, but it is so worth it. Since I don’t do a lot of baking, it lasts me a very long time. It doesn’t have aftertaste or cooling effect.
Love this recipe Steve! It is so delicious. I also used apple pie spice and threw in a few dried berries for extra sweetness.
How do you store your granola, Steve?
I have stored mine in a plastic container and give it a good shake to break it up. I don’t put the granola in the fridge as it does go pretty fast. I would put thee bites in the fridge, especially if it’s warm in the house.
