Caramel Cashew Chaffle

gramsI often have viewers request a sweet chaffle recipe that doesn’t contain almond flour or coconut flour. With this recipe, I use cashew flour to create a chaffle that my kids both describe as “like a caramel cashew sundae from Culver’s”. To me, that’s pretty high praise.
Ingredients
1 large egg (room temp)
2 oz softened cream cheese (55g)
2 TB cashew flour (15g)
1/4 tsp baking powder
2 squirts caramel flavored liquid stevia
Directions
- Preheat waffle iron(s). This recipe will yield three Dash Mini sized waffles. (see note)
- Mix or blend all of the ingredients into a smooth batter. I find that my Cuisinart Mini food processor works great for this.
- Pour 1/3rd of the batter into your Dash mini. I fill just a little less than I think I should so that it doesn’t leak when it expands. Watch the video to see how much I use.
- Cook for 3.5 to 4 minutes. These are best when they are still a little moist, so don’t overcook them.
- Set on a serving rack or serve immediately. Use for a breakfast sandwich; use as a “real” waffle with butter; make a keto ice cream sandwich with them. Be creative and enjoy!

Notes
- Macros may vary slightly depending on the brand of cream cheese used (less than .5g carbs per chaffle)
- A “squirt” for this recipe is just a short squeeze. I’d estimate it to be at most 1/2 tsp.
- This recipe can easily be doubled and if you are using a traditional waffle maker, like the Dash No Mess, it will yield four larger sized chaffles/waffles when doubled.

Another big winner! TY Steve! It was easy and delicious! It would be helpful to add approximate tbsp or tsp amount to measure out each of the 3 servings evenly… Otherwise the guessing method creates 2 overflowing Chaffles, and one underfilled chaffle. Thanks for the help!
