When I eventually release a cookbook, one of its features will be what I call “recipe/ingredient sequencing”. Recipes will be linked to one another so that you can see how to build on them or use them in other recipes or how to repurpose leftovers. This recipe, the turtle chaffle, is the first time I’m putting that into actual practice. I draw upon not just previous chaffle recipes, but also my candied pecans recipe and my caramel sauce recipe. The result is a dessert chaffle that is so decadent, you (and your family) won’t believe it’s keto.

Ingredients

  • 4 TB cream cheese, softened (55g)

  • 1 large egg, preferably room temp

  • 1 TB vanilla whey protein powder (15g) *see note

  • 1/4 tsp baking powder

  • 2 TB crushed candied pecans (25g)

  • 2 TB sugar free chocolate chips *see note

  • 2 TB caramel sauce

Directions

  • Mix the cream cheese and egg until smooth. I find that using a small food processor works best.
  • Scrape down the sides of your food processor if necessary, then add the protein powder and baking powder. Pulse 4 to 5 times to incorporate into the batter.
  • Add the crushed candied pecans and pulse another 3 to 4 times.
  • Pour 1/3rd of the batter into a mini waffle maker, filling only about 80% as much as you think you should. Sprinkle 1/3rd of the chocolate chips on top of the batter, then cook your chaffles for about 3 1/2 minutes or until they stop steaming. Repeat with the other 2 chaffles.
  • Drizzle my caramel sauce on top. From there, you can add whipped cream or keto ice cream if you want.

Notes

  • Nutritional information is based on one chaffle with caramel sauce. It does not include any additional toppings.
  • In my video, I used Bake Believe milk chocolate chips. I find that brand to work pretty well in baking applications. The macronutrients in this recipe are based on the dark chocolate chips, which are lower carb and are equally wonderful in this recipe. You can use whatever brand you want, but be aware the carb count may vary.

    I didn’t plan ahead and wanted these for breakfast today. So I took a couple of shortcuts and they still were very good. I used pre-chopped pecans and Choc Zero Caramel syrup. Also I only had plain whey protein so added a little vanilla extract too. Added a bit of liquid Stevia to make up for the plain pecans. I had enough batter to make four chaffles. I’ll make them again using the proper pecans and caramel sauce because I’m sure those would be awesome. Thanks Steve for all the great recipes!

  7. This is my first time comenting on anything; I hope it comes out right. I was just watching your program about building on original chaffle recipes. There was one which usd cream cheese. You remarked on how delicate it was, but didn’t offer any suggestion as to how it could be used. When I heard the word “delicate,” I immediately thought “dessert.” Why not a dessert chaffle, along the lines of a dessert crepe? Garnished with lightly-whipped cream and berries of some sort – raspberries, I think

  9. I made this but instead of nuts and caramel, I added sugar free maple syrup and cinnamon to the batter. I really liked your McGriddle but since I track total carbs, it was too high for me. This came out excellent and I think I liked it better than the othet. Thanks for another winning recipe!
