gramsThis recipe can be an appetizer or a savory fat bomb. It doesn’t require much work, yet the results look seriously gourmet. And with just .5g of net carbs per serving, it doesn’t get much more keto friendly.
Ingredients
rind from one medium lemon, cut into thin ribbons
1 serrano pepper, thinly sliced
2 TB roughly chopped flat leaf parsley
1.5 TB zahtar (or za’atar)
1/4 tsp kosher salt
12-15 grinds black pepper
1 cup extra virgin olive oil (240mL)
1 pound block feta in brine (450g)
Directions
- Whisk together all ingredients except feta in a medium bowl or Pyrex measuring cup.
- Cut feta into cubes, roughly 3/4 inch or 2 cm in size and place in a glass baking dish.
- Pour marinade over feta, cover with plastic wrap and refrigerate for 2-3 days.
- Serve with crackers, olives or as part of a charcuterie tray.
