Creamed Cabbage with Bacon

gramsThis is one of my wife’s favorite side dishes and also allows you to use up the leftover cabbage from my cabbage roll recipe. The cabbage is soft, but not mushy, and the bacon and green onion elevate this creamy side dish from boring to delightful. In terms of the quantity of cabbage to use, don’t get real hung up on the amount. Close is “good enough”. If you have more than 11-12 oz, feel free to scale up the other ingredients accordingly.
Ingredients
2 TB butter
11 oz boiled cabbage, coarsely chopped (310g)
2 slices cooked bacon, roughly chopped
2 green onions, finely sliced
1/2 cup chicken broth (120mL)
1/4 cup heavy whipping cream (60mL)
salt and pepper to taste
Directions
- In a chef’s pan or other high sided pan with lid, melt the butter over medium heat.
- Add the cabbage, bacon, green onion, and salt and pepper and saute over medium heat for about 5 minutes.
- Add the chicken broth and cover for 15 minutes or until most of the liquid is absorbed.
- Stir in heavy whipping cream, turn the heat to low, and let cook an additional 5 minutes before serving.
I have only had cabbage cooked in butter with onions. This sounds great, I have to get green onions today before I can cook it. Thanks Terry for the great idea, and thanks for putting in a written recipe that’s easy to follow.
I finally got around to trying this side dish. ‘Served it with sauteed slices of kielbasa, mustard and a dill pickle. I mistakenly tossed in the cream at the same time as the broth, but it came out fine. A very tasty recipe, Terry. I look forward to eating it again. Thanks!
