gramsLupini has become a wonderful addition to keto recipes, with it’s high protein and high fiber / low net carb profile. In this recipe, shared with me by David Kolton of Aviate foods, I use his lupini keto rice to make an incredibly easy and very tasty risotto
Ingredients
1.5 cups chicken broth (355mL)
4 cloves garlic, minced (15g)
1/2 tsp salt
1/4 tsp black pepper
1 pouch Aviate lupini rice
1/3 cup heavy whipping cream (80mL)
2 TB finely chopped fresh parsley (4g)
1/2 cup grated parmesan (35g), plus more for garnish
optional: fresh lemon zest
Directions
- Combine broth, garlic, salt and pepper in a medium sauce pan and bring to a boil.
- Stir in lupini rice, cover and reduce heat to low. Let simmer for 15 minutes, stirring half way through.
- Stir in the heavy whipping cream, parsley and parmesan and test for texture. If it is still too firm for you liking, cover and let cook for another couple of minutes.
- Garnish with additional parmesan and lemon zest. Serve with the protein of your choice.

Notes
- The lemon zest was not in David’s original recipe, but I found that it added a great balance to the richness of this dish.
