Mashed Cauliflower “Faux-tatoes” with Keto Chow

Keto Chow recently released a new flavor created by yours truly – baked potato. I designed this flavor to be used in any recipe where you’re trying to achieve the flavor of potatoes while keeping your carbs low. While this recipe doesn’t have the starchy texture of real mashed potatoes, the flavor is pretty darn close.

Ingredients

  • 1 head cauliflower, broken into florets (about 600g)

  • 4 TB butter (60g)

  • 2 TB cream cheese (30g)

  • 1/2 packet Keto Chow Baked Potato (3TB or 21g)

Directions

  • Boil the cauliflower until it is soft enough that when you pierce it with fork it slides off (roughly 15 minutes).
  • Drain the cauliflower and set aside.  Pro tip: if you run it through a salad spinner, you’ll get even more water out, leading to thicker mashed faux-tatoes.
  • Return the cauliflower to a medium sauce pan over medium-low heat and add the butter and cream cheese.  Pro tip: If you have a potato ricer, press the cauliflower through that and into the saucepan for a SUPER CREAMY end product.
  • Sprinkle the Keto Chow on top, then use an immersion blender to whip the cauliflower into a creamy mash.  Cook over medium low for an additional 5-10 minutes or until it has thickened to your desired consistency.
  • Salt and pepper to taste.

Notes

  • The reason I classified this recipes as “medium” difficulty is due to the specialty ingredient (Keto Chow) and because I know not everyone has an immersion blender or the optional potato ricer.

  1. Beg Keto Chow to make this a staple and not ‘seasonal’. Who does not enjoy mashed potatoes year-round?

  2. You really nailed the smell and flavor of potatoes. Great job. I just made some Potato Soup Keto Chow and I will blend it with the cream cheese, butter and cooked cauliflower tonight to serve with hot dogs.

I came across your “mashed potatoes” video again and I got to thinking (that’s bad for me 😁), have you thought of doing a video on French fries using yours and Keto Chow’s potato flavor packet? I’m not one for creating recipes so I don’t know how to change you recipe from mashed potatoes to a thicker version to form the potato sticks. Would you consider doing a video like this?
