gramsVegetable choices are limited on a ketogenic diet, and cauliflower gets a lot of the action. There are plenty of ways to liven up cauliflower, but few are as delicious as this bacon weave cauliflower meatloaf. I strongly encourage you to watch the video, as it shows in far better detail how to complete some of these steps (especially the bacon weave) better than I can explain it.
Ingredients
1 small head of cauliflower (a little over a pound or 500g, once the leaves are removed)
2 oz sharp cheddar cheese (55g)
2 lbs 70% lean ground beef (910g)
16 oz thin sliced bacon (450g)
Directions
- Preheat oven to 450F or 230C, ideally convection.
- Remove leaves from cauliflower and trim the stem so that it is a little indented. Steam for 20 minute or until a paring knife slides easily in and out of the center. Set aside until no longer too hot to handle.
- Cut the cheddar into short sticks, about an inch and a half long (4cm) and insert them into the crevices in the underside of the cauliflower.
- In a medium/large mixing bowl, press the ground beef against the sides, creating an interior meat bowl. Set the cauliflower into the ground beef and mold the beef around it until cauliflower is completed encased in a ball of meat.
- Create a bacon weave and place the meat loaf onto the weave, cauliflower stem side up, then wrap the bacon tightly around it. See video for complete instructions.
- Transfer the bacon wrapped meatloaf to a baking sheet with a rack. You can also line the baking sheet with aluminum foil for easier cleanup later.
- Bake for 45 minutes, rotating the baking sheet 180 degrees at 25 minutes.
- Remove meatloaf from oven, then flip it bottom side up (I use two spatulas). Set the oven to roast at 400F or 205C and return the meatloaf to the oven for 5-10 minutes or until the bacon on the bottom of the meatloaf is as crispy as the top and sides.
- Let cool for 5-10 minutes before slicing and serving.
