Keto Pizza Hot Pocket

gramsWhen I snack on keto, I prefer savory foods rather than sweet. In my pre-keto days, I loved Pizza Rolls and Hot Pockets, and this makes for a great substitute for those, while keeping the carbs low. See the notes below for some tips.
Ingredients
1/4 cup shredded mozzarella (30g)
1/2 cup marinara or arrabbiata sauce (125g) *see note
8 slices pepperoni (16g)
1/4 cup cooked Italian sausage (30g) *optional
3 snack size keto tortillas *see note
1 large egg, beaten
Directions
- Combine mozzarella, sauce, and meat in a small bowl.
- Place a tortilla on a jumbo empanada press and place 1/3rd of the mixture in the center. Brush the edges with egg wash and then close the empanada maker and squeeze firmly to seal. Repeat with the remaining tortillas.
- Place the pizza pockets into the basket of an air fryer, brush the tops with egg wash and cook for 6-8 minutes, flipping at the half way point and brushing the other size with egg wash.
- After cooking, let cool for a minute or two so that the filling isn’t like lava. Enjoy!

Notes
- If you want a thicker sauce, you can mix tomato paste with the marinara. Also, if you use marinara instead of arrabbiata sauce, you may want to add additional Italian seasoning for a stronger tasting sauce.
- I use La Bandarita “snack size” Carb Balance tortillas. They don’t spike my glucose or use inflammatory oils. Also, they’re the perfect size for my empanada maker.
- Play around with the ratios of ingredients. If you like a gooey, super cheesy hot pocket, use half the amount of sauce and double the amount of cheese.
- Due to variations in air fryers, you may need to experiment with cooking time.
- Nutritional info is per “hot pocket” and includes the optional Italian sausage.

I purchased the same empanada maker from Amazon and then purchased the little carb balance tortillas snack size. When I put a filling ( I used chicken pot pie filling) the tortilla sunk done in the center to fit the maker and then was too small to reach all edges for crimping. I tried several times using various amounts of filling and the tortilla just wouldn’t reach the edges. I am now going to try the next size, which is too large, but I will trim it and try again. The idea is great. I just don’t know how you got them sealed. Thanks
I’m not sure what to tell you. I make something at least once a week using the combination of the empanada maker and the “Snack Size” La Bandarita tortillas.
