Fathead dough was inspired by the the Tom Naughton documentary “Fat Head”. There are many variations on the dough depending on what you are creating, from crackers to bagels to breadsticks to pizza dough. It’s versatility makes for a great starting point on many easy keto recipes.

Ingredients

  • 1.25 cups shredded mozzarella (150g) – divided

  • 1/2 cup almond flour (60g)

  • 4 TB cream cheese (60g)

  • 1 tsp Italian seasoning blend (5g) – *optional

  • 1/4 cup low carb marinara or arrabiata sauce, like Rao’s (60g)

  • 12 slices pepperoni, chopped

Directions

  • Preheat oven to 350F (177C) *see note #2
  • Combine 1 cup (120g) of shredded mozzarella and the almond flour in a small food processor and process until it looks like breadcrumbs.
  • Place mixture into a microwave safe bowl along with the cream cheese and and Italian seasoning and microwave in 30 second intervals, mixing with a spatula between bursts. I found that 1 minute was enough on my microwave. *see note #3
  • Once the dough is mixed and uniform with no streaks of cream cheese, divide into a 12 compartment mini-muffin tray. Press the dough along the sides and bottom using your fingertips. The dough will not stick to your fingers.
  • Bake for 7-8 minutes or until the crust has started to brown.
  • Remove from oven and allow to cool for a couple of minutes, then add the pepperoni bits, pressing down to flatten the bottom of the crust.
  • Add about 1 tsp of sauce per pizza bite, then top with the remaining 1/4 cup (30g) of mozzarella.
  • Bake for another 7-8 minutes or until the cheese on top is to your desired doneness.
  • Allow to cool for a few minutes before serving for the sauce to cool and the crust to firm up.

Notes

  • Nutritional info is based on each pizza bite
  • Cooking time will vary by oven. I recommend placing the muffin tin on one of the lower racks of your oven and do NOT use convection. This will help the bottoms of the bites cook more uniformly.
  • If you do not want to use a microwave, you can create the dough in a double boiler, though this will take more time.
  • These pizza bites can be made with whatever fillings you like if you prefer something instead of pepperoni.
